Briami (Greek Roasted Vegetable Bake)
Why this recipe works
- Savoury pan juices: Grated ripe tomato, olive oil, garlic and oregano coat the vegetables and reduce into a rich, spoonable sauce as they roast.
- Tender with caramelised edges: Spreading the vegetables in an even layer lets some pieces sit above the sauce, giving soft centres and lightly browned edges.
- Good for planning ahead: The bake keeps well, reheats reliably and can be frozen in portions without losing its comforting vegetable-forward character.

Timing notes
- Let the juices settle: A short rest after roasting helps the tomato and olive oil juices settle around the vegetables, making the bake easier to serve.
- Best served warm: Briami is at its best warm rather than piping hot, when the vegetables are tender and the lemon and herbs taste fresh.
Texture tips
- Cut the potatoes evenly: Keep the potato slices even so they soften at the same rate as the courgette, aubergine and pepper.
- Leave some vegetables exposed: Do not fully submerge everything in sauce; exposed edges roast and caramelise while the lower pieces absorb the pan juices.
Make-ahead tips
- Reheat gently: Reheat in a 180°C (355°F) oven until piping hot throughout, adding a little water only if the pan juices have reduced too far.
- Freeze in portions: Cool completely before freezing, then defrost overnight in the fridge before reheating.
Authenticity notes
- Greek home-style bake: Briami is commonly served as a simple vegetable-forward dish, often with crusty bread or as part of a larger Mediterranean meal.
- Olive oil matters: Olive oil is central to the flavour and texture, helping the vegetables soften, gloss and carry the tomato and herb juices.

Ingredients
Instructions
- Heat the oven to 200°C (390°F). Crush the garlic and grate the tomatoes on the coarse side of a grater into a bowl, discarding the skins. Stir in the olive oil and oregano.
- Cut the potatoes into 1 cm slices, the aubergine and courgette into thick half-moons, and the peppers into chunky strips. Slice the red onion into wedges. Add all the vegetables to a large bowl, pour over the tomato mixture, and toss until well coated.
- Tip everything into a large baking dish and spread into an even layer, making sure some vegetables are peeking above the sauce. Roast for 35 minutes, then turn the vegetables and spoon some of the pan juices over the top. Return to the oven for 25 to 30 minutes, until the potatoes are tender and the edges are lightly caramelised.
- Finely chop the parsley. Squeeze over the lemon, scatter with the parsley, and let it stand for 5 minutes so the juices settle. Serve warm with plenty of the pan juices spooned over.
Recipe notes
Tips
- For the best texture, keep the potato slices around 1 cm thick so they cook through at the same time as the other vegetables.
- If the pan looks dry partway through roasting, spoon the tomato and olive oil juices from the corners over the vegetables rather than adding extra liquid.
- If serving to anyone vulnerable, make sure the dish is reheated until piping hot throughout.
Substitutions
- Replace Fresh oregano with Fresh parsley for a softer, greener herb finish.
- Replace Red pepper with Courgette for a milder, sweeter bake.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven for 15 to 20 minutes until piping hot, adding a splash of water only if the pan juices have reduced too far. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
