Ratatouille Niçoise (Vegan Provençal Vegetable Stew)
Why this recipe works
- Built-in depth: Browning the aubergine before simmering adds savoury depth to an otherwise simple vegetable stew.
- Fresh but rounded: Ripe tomatoes give the stew acidity and body, while olive oil softens the edges and brings the vegetables together.
- Good for planning ahead: The flavours settle well after cooking, making this a useful dish to refrigerate, freeze or reheat gently.

Ingredient notes
- Use ripe tomatoes: Ripe tomatoes give the sauce better sweetness, acidity and body; less ripe tomatoes may need more careful seasoning.
- Cut evenly: Keeping the aubergine, courgette and pepper pieces a similar size helps them soften at a similar pace.
- Add basil late: Fresh basil is best stirred in at the end so it keeps its fragrance rather than fading during the simmer.
Texture tips
- Brown the aubergine properly: Let the aubergine take on deep golden colour before it goes back into the pan; this improves both flavour and texture.
- Finish uncovered: A short uncovered simmer at the end reduces excess liquid and leaves the vegetables in a richer tomato sauce.
Make-ahead tips
- Good the next day: Ratatouille keeps well in the fridge, and the flavours often become more integrated after resting overnight.
- Reheat gently: Warm it in a saucepan over low heat, stirring occasionally, and add a splash of water if the sauce has thickened too much.
- Freeze in portions: Cool completely before freezing, then defrost overnight in the fridge before reheating until piping hot.
Authenticity notes
- Niçoise-style vegetable stew: This style of ratatouille reflects Provençal cooking: olive oil, summer vegetables, garlic, tomatoes and fresh herbs cooked into a soft, savoury stew.
- Colour before simmering: Cooking the vegetables in stages gives them more character than simply simmering everything from raw.

Ingredients
Instructions
- Cut the aubergine and courgette into 2 cm chunks, and cut the red peppers into similar-sized pieces. Finely slice the garlic. Roughly chop the tomatoes and tear most of the basil, reserving a few leaves to finish.
- Heat 2 tbsp of the olive oil in a large casserole over medium-high heat. Add the aubergine with a pinch of the salt and cook for 8 to 10 minutes, stirring often, until well browned and starting to soften. Tip into a bowl.
- Add the remaining 2 tbsp olive oil to the pan, then add the peppers and cook for 5 minutes until glossy and lightly coloured. Add the courgette and cook for 3 to 4 minutes to take the raw edge off. Stir in the garlic for 30 seconds until fragrant.
- Return the aubergine to the pan and add the tomatoes, remaining salt and the black pepper. Bring to a gentle simmer, then cover and cook over low heat for 20 minutes, stirring occasionally, until the vegetables are tender and the sauce is rich. If it looks dry at any point, add a small splash of water and scrape up any browned bits.
- Uncover and simmer for 2 to 4 minutes to thicken slightly, then stir through the torn basil. Taste and adjust seasoning with a little more salt and pepper if needed. Serve warm, topped with the reserved basil leaves.
