Vegan Ratatouille with Herbed Polenta
Why this recipe works
- Slow-built vegetable flavour: Garlic, olive oil and ripe tomatoes create a savoury base while the aubergine, courgette and pepper soften into a rich stew.
- Creamy base without dairy: Polenta thickens naturally as it cooks, giving the dish a smooth, comforting texture without needing butter or cheese.
- Freshness and balance: Tomatoes bring gentle acidity, while basil and parsley lift the finished polenta so the bowl feels hearty but not heavy.

Texture tips
- Keep the vegetables defined: Simmer gently and stop once the vegetables are tender but still holding their shape, rather than cooking them until they collapse.
- Revive thick polenta: If the polenta firms up before serving, loosen it with a splash of water and stir over low heat until smooth again.
Ingredient notes
- Use ripe tomatoes if possible: Ripe tomatoes give the ratatouille better sweetness and body; less ripe tomatoes may need a little extra seasoning at the end.
- Cut vegetables evenly: Keeping the aubergine, courgette and pepper in similar-sized pieces helps them cook at the same pace.
Make-ahead tips
- Store separately: Keep the ratatouille and polenta in separate airtight containers so the polenta does not absorb too much liquid.
- Reheat gently: Warm the ratatouille over low heat until piping hot, and reheat the polenta with a splash of water, stirring until creamy.
- Freeze the ratatouille: The ratatouille freezes well, while polenta can become grainy after freezing and should be whisked thoroughly when reheated.
Authenticity notes
- Provençal roots: Ratatouille is closely associated with southern French cooking, where summer vegetables are slowly cooked with olive oil and garlic.
- Polenta as a serving base: Serving ratatouille over herbed polenta is a practical modern pairing, adding substance while keeping the focus on the vegetables.

Instructions
- Prepare the vegetables: cut the aubergine and courgette into bite-size chunks, and cut the red pepper into similar pieces. Finely slice the garlic. Roughly chop the tomatoes.
- Heat the olive oil in a large pot over medium heat. Add the garlic and cook for 30 to 60 seconds until fragrant, then add the aubergine, courgette and red pepper with the salt and pepper. Cook, stirring often, for 8 to 10 minutes until the vegetables start to soften and take on a little colour.
- Stir in the tomatoes, bring to a gentle simmer, then reduce the heat to low. Cover and cook for 20 minutes, stirring occasionally, until the ratatouille is thick, glossy and the vegetables are tender but not collapsing. Taste and adjust seasoning if needed.
- While the ratatouille simmers, bring the water to the boil in a saucepan and stir in the salt. Slowly rain in the polenta while whisking, then reduce to low and cook for 8 to 12 minutes, stirring often, until thick and creamy. Stir in the olive oil and black pepper.
- Finely chop the fresh basil and fresh parsley, then stir them through the polenta. Spoon the polenta into bowls and top with the ratatouille. Rest for 1 to 2 minutes so the polenta settles, then serve hot.
Recipe notes
Tips
- Keep the ratatouille at the gentlest simmer so it reduces slowly and stays sweet, rather than turning watery.
- If the polenta thickens too much before serving, loosen it with a splash of water and stir over low heat until creamy again.
Substitutions
- Replace Fresh basil with Fresh parsley for an all-parsley polenta if that is what you have.
- Replace Olive oil with Light olive oil for a milder flavour in both the ratatouille and the polenta.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate the ratatouille and polenta in separate airtight containers. Reheat the ratatouille in a saucepan over low heat until piping hot; reheat the polenta with a splash of water, stirring until creamy. Freeze the ratatouille for up to 2 months; the polenta can be frozen but may turn grainy, so whisk well when reheating.
