Gehaktballen in Jus (Dutch Meatballs in Gravy)
Why this recipe works
- Built-in gravy flavour: Browning the meatballs first creates savoury pan juices that dissolve into the stock for a deeper-tasting jus.
- Classic comfort: Butter, beef, onion and nutmeg give the meatballs the warm, familiar flavour associated with Dutch home cooking.
- Reheats well: The meatballs stay moist in the gravy, making them practical for cooking ahead and reheating gently.

Texture tips
- Mix lightly: Combine the meatball mixture only until it holds together; overworking minced beef can make the meatballs dense.
- Brown before simmering: Colour the meatballs well, then finish them gently in the gravy so they cook through without drying out.
Common mistakes
- Avoid a hard boil: Keep the gravy at a gentle simmer once the meatballs go back into the pan; vigorous boiling can toughen the meat.
- Do not skip the pan scraping: Scraping up the browned bits when the stock is added is what gives the jus its savoury depth.
Make-ahead tips
- Cook ahead: The meatballs and gravy can be made in advance, cooled completely and refrigerated in a sealed container.
- Reheat gently: Warm slowly in a saucepan over low heat, adding a splash of water if the gravy has thickened too much.
- Freezer-friendly: Freeze the cooked meatballs in their gravy, then thaw overnight in the fridge before reheating until piping hot.
Authenticity notes
- Dutch home-style dish: Gehaktballen in jus are a familiar Dutch dinner, valued for their simple seasoning, buttery gravy and comforting serving style.
- Classic serving: They are commonly served with boiled or mashed potatoes and vegetables so the gravy can be spooned over everything.

Instructions
- Finely chop the onion. Melt 20 g of the butter in a large frying pan over medium heat, then cook the onion for 6 to 8 minutes until soft and lightly golden. Scrape it into a mixing bowl and let it cool for 5 minutes.
- Add the minced beef, breadcrumbs, egg, fine sea salt, black pepper and ground nutmeg to the bowl with the cooled onion. Mix with your hands just until combined, then shape into 8 meatballs. If the mixture feels sticky, dampen your hands lightly with water as you roll.
- Return the pan to medium-high heat and melt 20 g of the butter. Brown the meatballs for 6 to 8 minutes, turning to colour all over; they do not need to be cooked through at this stage. Transfer the meatballs to a plate.
- Lower the heat to medium and add the beef stock to the pan, scraping up the browned bits with a wooden spoon. Bring to a gentle simmer, then return the meatballs (and any juices) to the pan. Simmer for 12 to 15 minutes, turning once or twice, until the meatballs are cooked through and the gravy tastes rich.
- Turn the heat to low and whisk in the remaining 20 g butter a little at a time until the gravy looks glossy. Taste and adjust with a little more black pepper if you like. Serve the meatballs spooned with plenty of gravy.

Tips
- For a smoother gravy, keep the simmer gentle and scrape the pan well when you add the beef stock so the browned bits dissolve into the sauce.
- If you are serving vulnerable groups, use a pasteurised egg to reduce the risk from raw egg in the uncooked meatball mixture.
Substitutions
- Replace Beef stock with Chicken stock for a lighter gravy.
- Replace Butter with Ghee for a slightly nuttier finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat with a splash of water if needed, until piping hot throughout; freeze for up to 2 months and thaw overnight in the fridge before reheating.
