Meatloaf with Brown Onion Gravy
Why this recipe works
- Classic comfort-food flavour: Beef, onion, Worcestershire sauce and brown gravy give the dish a deeply savoury, familiar finish.
- Tender, sliceable loaf: Milk-soaked breadcrumbs and egg help bind the beef while keeping the texture moist rather than compact.
- Tangy glaze: Ketchup on top adds a gentle sweetness and acidity that balances the richness of the meat and gravy.

Timing notes
- Rest before slicing: Letting the meatloaf rest after baking helps the juices settle, making it easier to cut clean slices.
- Serve while the gravy is glossy: The onion gravy is best served warm; if it thickens as it stands, loosen it gently with a little more stock.
Common mistakes
- Do not overmix the beef: Mix only until the ingredients are evenly combined, as heavy mixing can make the finished loaf dense.
- Watch the gravy thickness: Add the stock gradually and simmer until the gravy coats the back of a spoon; too much reduction can make it stodgy.
- Avoid slicing too soon: Cutting straight from the oven can cause the loaf to crumble and lose moisture.
Make-ahead tips
- Make ahead: The meatloaf can be baked in advance, cooled, then chilled and sliced when needed.
- Store loaf and gravy separately: Keeping the gravy separate helps the slices hold their texture and makes reheating more controlled.
- Reheat gently: Warm sliced meatloaf in a 180°C (355°F) oven until piping hot, and reheat the gravy slowly in a saucepan.
Ingredient notes
- Choose minced beef with some fat: A little fat in the beef helps keep the loaf juicy and gives the gravy a fuller savoury character.
- Balance the ketchup glaze: Ketchup gives the top a sweet-tangy finish; tomato sauce can be used if you prefer a more savoury flavour.

Ingredients
Instructions
- Heat the oven to 180°C (355°F). Finely dice the onion, then set aside about one third for the gravy.
- In a mixing bowl, combine the minced beef, breadcrumbs, milk, egg, 2 tbsp of the ketchup, 1 tbsp of the Worcestershire sauce, the remaining diced onion, salt and pepper. Mix gently until just combined so the meatloaf stays tender.
- Shape the mixture into a neat loaf on a baking tray. Spread the remaining ketchup over the top.
- Bake for 50 to 55 minutes, until browned and the centre is cooked through. Rest the meatloaf for 10 minutes before slicing.
- While the meatloaf rests, melt the butter in a saucepan over medium heat and cook the reserved onion for 6 to 8 minutes until soft and lightly golden. Stir in the flour and cook for 1 minute to remove the raw taste.
- Gradually whisk in the beef stock, then simmer for 5 to 7 minutes until glossy and thick enough to coat the back of a spoon. Stir in the remaining Worcestershire sauce and a splash of milk, then taste and adjust with a little more salt and pepper if needed.
- Slice the meatloaf and serve hot with the warm brown onion gravy poured over.
Recipe notes
Tips
- For a juicier meatloaf, mix the beef only until everything is evenly combined; overmixing can make it dense.
- If the gravy thickens too much as it sits, whisk in a little more beef stock over low heat until it loosens.
- If serving vulnerable groups, make sure the meatloaf is cooked until piping hot all the way through.
Substitutions
- Replace whole milk with lactose-free milk for the same tenderness in the meatloaf and a similar finish in the gravy.
- Replace ketchup with tomato sauce for a less sweet glaze and a more savoury top.
Storage
- Refrigerate up to 3 days
- Cool meatloaf and gravy, then refrigerate in separate airtight containers. Reheat sliced meatloaf in a 180°C (355°F) oven until piping hot, and warm the gravy gently in a saucepan, loosening with a splash of beef stock if needed.
