Five-Spice Jerk Chicken Drumsticks

Jerk chicken is known for its bold chilli heat, aromatic alliums and sweet-savoury spice, usually served with something fresh or sharp to cut through the richness. This oven-roasted version keeps that spirit but adds Chinese five-spice and soy sauce for a deeper, warmer savouriness alongside the jerk seasoning. Skin-on drumsticks are a good fit because they stay juicy while the dark brown sugar helps the coating turn sticky and browned. Lime wedges at the table bring the essential final lift, making the chicken easy to serve with rice, slaw, roasted vegetables or as part of a relaxed sharing meal.

Why this recipe works

  • Layered spice: Jerk seasoning brings heat and aromatics, while Chinese five-spice adds warm, sweet-edged depth.
  • Sticky, savoury coating: Soy sauce and dark brown sugar help the paste cling to the drumsticks and roast into a glossy, browned glaze.
  • Fresh lime finish: Lime wedges cut through the sweetness and heat, making the finished chicken brighter and more balanced.

Adjust the heat

  • For less heat: Remove the chilli seeds and white pith before chopping, or use a milder fresh chilli.
  • For more fire: Choose a hotter chilli or use a more assertive jerk seasoning blend if yours is mild.
  • Balance at the table: Serve with plenty of lime and a crisp salad or slaw to soften the heat without muting the spice.

Ingredient notes

  • Jerk blends vary: Some jerk seasonings are saltier or hotter than others, so check the blend before adding extra chilli.
  • Use skin-on drumsticks: Skin-on chicken gives the coating more surface area to brown and helps the drumsticks stay juicy.
  • Do not skip the lime: The lime is more than a garnish; it sharpens the sticky glaze and lifts the roasted spices.

Texture tips

  • Roast in a single layer: Give the drumsticks space on the tray so the coating browns rather than steams.
  • Turn once during roasting: Turning halfway helps the glaze cook evenly and prevents one side from becoming too wet.
  • Rest briefly before serving: A short rest lets the juices settle while keeping the sticky coating glossy.

Make-ahead tips

  • Coat ahead: The chicken can be tossed with the paste in advance and kept covered in the fridge until ready to roast.
  • Reheat gently: Reheat on a baking tray at 180°C (355°F) until piping hot, keeping an eye on the sugar-rich glaze.
  • Freezer-friendly: Cool cooked drumsticks completely before freezing, then defrost overnight in the fridge before reheating.

  1. Heat the oven to 220°C (430°F). Trim and finely slice the spring onions, crush the garlic, peel and finely grate the ginger, and finely chop the red chilli (remove the seeds for less heat).
  2. In a mixing bowl, stir together the spring onion, garlic, ginger, chilli, jerk seasoning, Chinese five spice powder, soy sauce and dark brown sugar to make a thick paste. Add the chicken drumsticks and toss well until every piece is thoroughly coated.
  3. Arrange the drumsticks on a baking tray in a single layer, scraping over any remaining paste. Roast for 35 to 40 minutes, turning once halfway, until sticky and browned and the chicken is cooked through.
  4. Cut the limes into wedges. Rest the chicken for 2 minutes, then serve with the lime wedges for squeezing over.

Recipe notes

Tips

  • For the stickiest finish, spoon the tray juices over the chicken for the last 5 minutes of roasting and keep an eye on it so the sugar does not catch.
  • If you are sensitive to heat, remove the chilli seeds and white pith before chopping.
  • For vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink at the bone and the juices run clear.

Substitutions

  • Replace Soy sauce with light soy sauce for a slightly lighter, saltier finish.
  • Replace Dark brown sugar with honey for a glossier, more floral sweetness.
  • Replace Red chili pepper with jalapeno pepper for a milder heat.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat on a baking tray at 180°C (355°F) for 12 to 15 minutes until piping hot, or freeze for up to 2 months and defrost overnight in the fridge before reheating.
