Roast Chicken with Herb Stuffing and Pan Drippings
Why this recipe works
- Crisp skin: Starting the chicken in a hot oven helps dry and brown the skin before the gentler roasting stage finishes the meat.
- Built-in flavour: The stuffing sits under the chicken, absorbing butter, herbs and roasting juices rather than cooking separately.
- Complete roast dinner feel: Chicken, stuffing and pan gravy are cooked from the same roasting tin, giving the dish a cohesive, savoury richness.

Timing notes
- Rest before carving: Let the chicken rest for the full 15 minutes so the juices settle and the meat carves more cleanly.
- Serve while the gravy is glossy: Make the gravy while the chicken rests, then serve soon after carving so the stuffing and pan sauce stay hot.
Texture tips
- For crisper skin: Pat the chicken very dry before seasoning and avoid covering it while it rests, as trapped steam will soften the skin.
- Keep the stuffing defined: Let the onion mixture cool briefly before mixing it with the bread so the stuffing stays moist rather than paste-like.
- Protect the breast meat: Use the thigh as the doneness guide; once the juices run clear there, avoid extending the roasting time unnecessarily.
Ingredient notes
- Use day-old bread if possible: Slightly stale bread absorbs stock and roasting juices without collapsing, giving the stuffing a better texture.
- Fresh herbs suit the stuffing: Fresh sage and parsley give a cleaner, brighter flavour than dried herbs, which can taste more concentrated.
- Adjust if using salted butter: Salted butter can make both the stuffing and gravy more seasoned, so reduce the added salt slightly and taste before serving.
Make-ahead tips
- Prepare the stuffing base ahead: The onion, garlic and herbs can be cooked and cooled in advance, then mixed with the bread shortly before roasting.
- Store leftovers separately: Keep chicken, stuffing and gravy in separate containers where possible so each reheats evenly and keeps its texture.
- Reheat gently: Warm the chicken and stuffing in a 180°C (355°F) oven until piping hot, and heat the gravy separately in a saucepan.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Pat the chicken dry, then season it all over with 1 tsp of the fine sea salt and 1/2 tsp of the black pepper.
- Melt 30 g of the unsalted butter in a saucepan over medium heat. Finely chop the yellow onion, then cook it with a pinch of the remaining salt for 8 to 10 minutes until soft and lightly golden.
- Crush the garlic and cook it with the onion for 1 minute until fragrant. Take off the heat and let it cool for 2 minutes so it does not melt the bread into a paste.
- Tear the white bread into small pieces and put into a bowl. Finely chop the fresh sage and fresh parsley, then mix into the bread with the onion mixture, 20 g of the remaining butter, 1/2 tsp salt, and 1/2 tsp black pepper; add 80 ml of the chicken stock and mix until evenly moistened.
- Spoon the stuffing into a mound in the centre of a roasting pan, leaving space around it. Sit the chicken on top of the stuffing so the juices baste it as it roasts, then dot the chicken with the remaining butter.
- Roast for 20 minutes, then reduce the oven to 190°C (375°F). Continue roasting for 55 to 65 minutes, until the skin is deep golden and the juices run clear when you pierce the thickest part of the thigh.
- Transfer the chicken to a board to rest for 15 minutes. Lift the stuffing into a warm serving dish and keep it loosely covered while you make the gravy.
- Tilt the roasting pan and spoon off most of the fat, leaving the browned bits and a little fat behind. Put the pan over medium heat, pour in the remaining chicken stock, and scrape well with a wooden spoon; simmer for 6 to 8 minutes until slightly reduced and glossy, then season with the remaining salt and pepper to taste.
- Carve the chicken and serve with the herb stuffing. Spoon plenty of pan drippings gravy over the top.
Recipe notes
Tips
- For extra-crisp skin, keep the chicken as dry as possible before seasoning and roasting.
- If the stuffing is browning too quickly, move it to one side of the tin and baste it with a spoonful of stock from the pan.
- Food safety: make sure the chicken is cooked through, with clear juices at the thigh joint, and serve piping hot.
Substitutions
- Replace Fresh sage with Fresh thyme for a softer, more floral herb note.
- Replace White bread with Country bread for a firmer, more rustic stuffing texture.
- Replace Unsalted butter with Salted butter, then reduce the Fine sea salt slightly when seasoning.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate within 2 hours. Store chicken, stuffing, and gravy separately if possible; reheat chicken and stuffing in a 180°C (355°F) oven until piping hot, and warm the gravy gently in a saucepan.
