Uruguayan Chivito (Steak Sandwich with Egg and Bacon)
Why this recipe works
- Fast cooking: Thin-cut steak, bacon and eggs cook quickly in the same pan, keeping the recipe practical for a weeknight meal.
- Good texture contrast: Crusty bread, crisp bacon, juicy steak, fresh lettuce and tomato give the sandwich structure rather than just richness.
- Layered savoury flavour: The beef, bacon, fried egg and mustard mayonnaise create a full, satisfying flavour without needing a long sauce or marinade.

Timing notes
- Serve straight away: Chivito is best assembled just before eating, while the egg is warm and the bacon still has its crispness.
- Rest the steak briefly: A short rest after searing helps the juices settle, making the steak easier to slice and less likely to soak the bread.
Ingredient notes
- Choose thin-cut steak: A thin steak cooks quickly and suits the sandwich format; slice it across the grain so it bites cleanly in the roll.
- Use firm tomatoes: Tomatoes should be ripe for flavour but firm enough to slice neatly and avoid making the roll soggy.
- Bread matters: A crusty white roll holds up well to the warm fillings, while a softer bun gives a richer, less structured sandwich.
Make-ahead tips
- Keep cooked components separate: If preparing ahead, store the cooked steak and bacon separately, then reheat and assemble with freshly fried eggs.
- Best eaten fresh: The finished sandwich does not store well once assembled, as the bread softens and the egg loses its ideal texture.
Authenticity notes
- Uruguayan style: Chivito is a recognisable Uruguayan steak sandwich, typically built generously with meat, egg, mayonnaise and fresh salad elements.
- Room for variations: Versions often vary by shop or household, but the quick-seared steak and abundant layered fillings are central to the dish.

Ingredients
Instructions
- Pat the steak dry, then season all over with the fine sea salt and black pepper. Split the crusty white bread rolls and slice the tomato. Mix the mayonnaise and Dijon mustard together for a quick sauce.
- Heat a large frying pan over medium-high heat and add 1 tbsp of the olive oil. Fry the bacon for 3–5 minutes, turning, until browned and crisp to your liking, then transfer to a plate. Keep the pan on the heat.
- Add the remaining 1 tbsp olive oil to the pan and crack in the eggs. Fry for 2–3 minutes until the whites are set and the yolks are still runny (or cook longer if you prefer). Transfer the eggs to the plate with the bacon.
- Turn the heat up to high and, in the same pan, sear the steak for 1–2 minutes per side, depending on thickness, until well browned and cooked to your liking. Rest the steak for 2 minutes so the juices settle. Slice thinly across the grain.
- Spread the mayonnaise mixture over the cut sides of the rolls. Layer in the iceberg lettuce, tomato, sliced steak, bacon, and a fried egg on each sandwich. Serve straight away while the egg is still warm.
Recipe notes
Tips
- For the best sear, make sure the pan is properly hot before the steak goes in and avoid moving it until a crust forms.
- If you are serving anyone who should avoid undercooked eggs, fry the eggs until the yolks are fully set.
Substitutions
- Replace Dijon mustard with mayonnaise for a milder, creamier sauce.
- Replace crusty white bread with brioche bun for a softer, richer sandwich.
- Replace iceberg lettuce with romaine lettuce for a sturdier crunch.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If needed, refrigerate the cooked steak and bacon separately in an airtight container for up to 1 day; reheat in a hot frying pan until piping hot, then assemble with freshly fried eggs and the remaining ingredients.
