Mosselen Natuur (Steamed Mussels with White Wine)
Why this recipe works
- Fast cooking: Mussels steam in just a few minutes, making this a practical seafood dish for a quick dinner.
- Aromatic broth: Leek, celery, shallot, wine and butter create a light cooking liquor that seasons the mussels without masking their natural brininess.
- Classic steaming method: A covered pot traps steam efficiently, opening the shells quickly while keeping the mussels plump and tender.

Ingredient notes
- Choose live, fresh mussels: Look for mussels that are tightly closed or close when tapped, and discard any with cracked shells.
- Season carefully: Mussels can vary in brininess, so use a light hand with salt at the start and adjust the broth at the end if needed.
- Use a dry white wine: A crisp, dry wine keeps the broth clean and savoury rather than sweet.
Timing notes
- Serve immediately: Mussels are at their best as soon as the shells have opened and the broth is still hot and fragrant.
- Best eaten fresh: Cooked mussels lose tenderness when held for too long, so this dish is best made just before serving.
Common mistakes
- Cooking too long: Remove the pot from the heat once most shells have opened; prolonged cooking can make mussels tough.
- Keeping leftovers in shells: If storing leftovers, remove the mussels from their shells and keep them in the broth before reheating gently.
Serving ideas
- Classic sides: Serve with crisp frites or crusty bread to catch the buttery white-wine broth.
- What to drink: Pair with the same style of dry white wine used in the pot, or a crisp Belgian-style beer.

Instructions
- Rinse the mussels in cold water, scrubbing if needed, and pull off any beards. Discard any that are cracked or stay open when tapped. Drain well in a colander.
- Trim and rinse the leek well, then slice it. Slice the celery and finely chop the shallots; roughly chop the parsley.
- Melt the butter in a large pot over medium heat. Add the leek, celery and shallot with the salt and pepper, and cook for 3 to 4 minutes until softened but not coloured.
- Pour in the white wine and bring to a lively simmer. Tip in the mussels, cover tightly, and steam for 4 to 6 minutes, shaking the pot once or twice, until the shells have just opened.
- Take off the heat and stir through most of the parsley, reserving a little to finish. Discard any mussels that have not opened. Ladle into warm bowls and spoon over the cooking liquor, then scatter over the remaining parsley.
Recipe notes
Tips
- Do not overcook: as soon as most shells are open, take the pot off the heat so the mussels stay plump.
- If your mussels taste very briny, reduce the fine sea salt slightly and season at the end.
- For anyone pregnant, elderly, or immunocompromised, ensure the mussels are steaming hot and fully opened before serving.
Substitutions
- Replace Dry White Wine with 200 ml water for an alcohol-free broth, then season carefully with Fine sea salt and Black pepper to taste.
- Replace Unsalted butter with Olive oil for a lighter, dairy-free finish.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you have leftovers, remove the mussels from their shells and refrigerate in the broth; reheat gently in a saucepan just until piping hot to avoid toughening.
