Southern-Style Shrimp and Grits with Cheddar
Why this recipe works
- Creamy base: Cooking the grits gently in milk and finishing with cheddar and butter creates a smooth, rich foundation for the prawns.
- Bright finish: Lemon juice cuts through the butter and cheese, keeping the dish lively rather than heavy.
- Fast cooking: The grits simmer while the aromatics are prepared, and the prawns need only a few minutes in the pan.

Ingredient notes
- Choose good grits: Stone-ground grits give the best flavour and texture, though cooking time can vary by brand.
- Use mature cheddar: A stronger cheddar seasons the grits more effectively and gives a deeper savoury finish.
- Separate the spring onions: Cooking the whites first builds a gentle onion base, while the greens stay fresh when stirred in at the end.
Texture tips
- For creamier grits: Keep the heat low and whisk often; add a small splash of milk if the grits tighten before serving.
- Keep prawns juicy: Remove the pan from the heat as soon as the prawns turn pink and opaque, then finish with lemon.
Common mistakes
- Letting the grits catch: Milk-based grits can stick on the base of the pan, so keep the simmer gentle and stir regularly.
- Overcooking the prawns: Prawns become firm and rubbery if cooked too long; they should be just opaque before serving.
Serving ideas
- Finish with freshness: Extra spring onion greens and lemon wedges at the table brighten the buttery grits and smoky prawns.
- Add greens: Serve with sautéed greens, a simple salad or roasted vegetables to balance the richness of the bowl.

Instructions
- Bring the whole milk and fine sea salt to a gentle simmer in a saucepan over medium heat. Whisk in the grits in a steady stream. Turn the heat to low and cook, whisking often, for 12 to 15 minutes until thick and creamy.
- While the grits cook, finely slice the spring onions, keeping the white and green parts separate. Finely grate the cheddar cheese. Finely grate or crush the garlic.
- Stir the cheddar cheese and half the unsalted butter into the grits until melted and glossy. If the grits look too thick, loosen with a splash more milk from the measured amount in the pan. Keep warm over the lowest heat, stirring occasionally.
- Melt the remaining butter in a large frying pan over medium-high heat. Add the spring onion whites and cook for 1 minute until softened, then add the garlic and smoked paprika and cook for 30 seconds until fragrant. Add the prawns and sauté for 2 to 3 minutes, turning, until pink and just cooked through.
- Take the pan off the heat and squeeze in lemon juice to taste, then stir through the spring onion greens. Spoon the cheesy grits into bowls and top with the smoky prawns and any buttery juices from the pan. Serve straight away with extra lemon at the table.
Recipe notes
Tips
- Keep the grits at a very gentle simmer and whisk regularly to prevent catching on the base of the pan.
- For the juiciest prawns, cook them just until they turn pink and opaque, then take the pan off the heat before adding the lemon.
Substitutions
- Replace cheddar cheese with parmesan for a sharper, saltier finish.
- Replace whole milk with half whole milk and half water for a lighter bowl.
Storage
- Refrigerate up to 2 days
- Cool quickly, then refrigerate in an airtight container. Reheat the grits gently in a saucepan with a splash of whole milk, stirring until smooth; warm the prawns briefly in a frying pan just until piping hot to avoid overcooking.
