Surf and Turf (Steak and Prawns)
Why this recipe works
- Fast but polished: Steak and prawns cook in the same pan, keeping the recipe efficient without losing the feel of a restaurant-style main.
- Built-in pan sauce: Garlic butter, lemon, parsley, and the steak’s browned bits create a glossy sauce with very little extra work.
- Tender steak, delicate prawns: Resting the steak while the prawns cook helps both elements stay juicy and properly timed for serving together.

Timing notes
- Rest the steak before serving: Move the steak to a warm plate while the prawns cook so the juices settle and the meat stays tender.
- Serve as soon as the prawns are ready: Prawns are best just cooked, so plate the dish promptly once they turn pink and opaque.
Ingredient notes
- Choose a steak suited to fast searing: Sirloin works well because it browns quickly and stays beefy without needing long cooking; ribeye gives a richer result.
- Dry the steak well: A dry surface helps the steak brown properly instead of steaming in the pan.
- Using frozen prawns: Thaw frozen prawns fully and pat them dry before cooking so they sauté cleanly in the butter.
Common mistakes
- Starting with a cool pan: The pan needs to be very hot before the steak goes in; otherwise the surface will grey before it develops a crust.
- Overcooking the prawns: Remove the prawns from the heat as soon as they are pink and opaque, as they continue to firm up in the hot butter.
- Letting the garlic brown: Lower the heat before adding butter and garlic so the garlic stays fragrant rather than bitter.
Serving ideas
- Good sides: Serve with crisp potatoes, a green salad, asparagus, or steamed greens to balance the buttery sauce.
- Extra sauce option: A little more lemon at the table keeps the dish bright and cuts through the richness of the steak and butter.

Ingredients
Instructions
- Pat the steaks dry, then season all over with the fine sea salt, black pepper and smoked paprika. Finely chop the garlic and parsley, and cut the lemon in half.
- Heat a frying pan over medium-high heat until very hot, then add the olive oil. Sear the steaks for 2 to 4 minutes per side, depending on thickness and how you like them, until well browned. Transfer to a warm plate to rest.
- Reduce the heat to medium and add the unsalted butter to the same pan. Once foaming, stir in the garlic and cook for 30 to 60 seconds until fragrant, keeping it pale. Add the prawns and cook for 2 to 3 minutes, tossing, until pink and just cooked through.
- Squeeze in the juice from half the lemon and stir in the parsley, scraping up any browned bits to make a glossy pan sauce. Taste and adjust with a little more fine sea salt and black pepper if needed. Serve the steaks with the prawns on top and spoon the pan juices over, with the remaining lemon half for squeezing at the table.
Recipe notes
Tips
- For the best sear, make sure the pan is properly hot before the steaks go in and avoid moving them until a crust forms.
- Do not overcook the prawns: take them off the heat as soon as they turn pink and opaque, as they will carry on cooking briefly in the hot butter.
- If you are serving anyone who is pregnant, elderly, or immunocompromised, cook the steak to well done and ensure the prawns are fully cooked through.
Substitutions
- Replace Beef sirloin steak with beef ribeye for a richer, more marbled steak.
- Replace Fresh parsley with fresh basil for a softer, sweeter herbal finish.
- Replace Smoked paprika with sweet paprika for a milder, less smoky flavour.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in an airtight container. Reheat gently in a frying pan over low heat with a small knob of unsalted butter until piping hot, taking care not to overcook the prawns.
