New England Lobster Roll
Why this recipe works
- Clean, balanced richness: Lemon juice and celery keep the mayonnaise dressing light enough to complement the lobster rather than mask it.
- Warm bun, cool filling: The butter-toasted roll adds crisp edges and warmth against the chilled, tender lobster mixture.
- Fast to assemble: Using cooked lobster meat keeps the method simple, with most of the work in chopping, dressing and toasting.

Authenticity notes
- New England style: This version follows the familiar cold-dressed New England approach: lobster in a light mayonnaise dressing served in a butter-toasted split-top roll.
- Maine-style simplicity: Many versions keep the seasoning restrained so the lobster remains the focus, with lemon, herbs and a little crunch from celery.
Ingredient notes
- Use good lobster meat: Choose fully cooked, properly chilled lobster meat and keep it in generous pieces for the best flavour and texture.
- Fold gently: Mix the dressing first, then fold in the lobster so the meat stays intact rather than breaking down.
- Adjust the lemon last: Taste after folding in the lobster and add a little more lemon only if the filling needs extra brightness.
Make-ahead tips
- Prep components ahead: Chop the celery and chives in advance, but dress the lobster close to serving for the freshest result.
- Keep buns separate: If storing leftovers, refrigerate only the lobster filling and toast fresh buns when ready to serve.
- Best served immediately: Assembled lobster rolls are at their best while the buns are still warm and crisp.
Common mistakes
- Overmixing the lobster: Stirring too firmly can shred the lobster and make the filling feel heavy rather than chunky and delicate.
- Assembling too early: Filling the buns ahead of time softens the toasted edges, so assemble just before serving.
- Not tasting before serving: Lobster and mayonnaise vary in seasoning, so taste the filling and adjust with salt, pepper or lemon as needed.

Ingredients
Instructions
- Finely dice the celery and finely chop the chives. Juice the lemon, then set aside 1 tsp of the juice for adjusting at the end if needed.
- In a mixing bowl, stir together the mayonnaise, Dijon mustard, fine sea salt, white pepper and most of the chives (reserve a pinch for serving). Mix in the celery and 2 tbsp lemon juice until evenly combined.
- Add the lobster meat and fold gently so it stays in generous pieces. Taste and add a little more reserved lemon juice if you want it brighter.
- Melt the unsalted butter in a frying pan over a medium heat. Toast the hot dog buns cut-side down for 2 to 3 minutes, turning as needed, until golden and crisp at the edges.
- Pile the lobster mixture into the warm buns and sprinkle with the reserved chives. Serve straight away while the buns are still crisp.
Recipe notes
Tips
- Keep the lobster cold while you prep, then dress it just before toasting the buns so the filling stays fresh and the buns stay crisp.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the lobster meat is fully cooked and properly chilled before using.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a coarser texture.
- Replace fresh chives with fresh dill for a more herby finish.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If needed, refrigerate the dressed lobster filling in an airtight container for up to 1 day and toast fresh buns to serve; do not store assembled rolls or the buns will soften.
