Torta Ahogada (Guadalajara Drowned Sandwich)
Why this recipe works
- Bold chilli-tomato sauce: The blended tomato, dried chilli and guajillo sauce brings heat, acidity and savoury depth to the rich pork filling.
- Saucy but structured: Toasted crusty rolls soften under the hot sauce while still holding the pork, beans and pickled onion together.
- Easy to prepare in stages: The pork, sauce and pickled onion can be made separately, then reheated and assembled just before serving.

Adjust the heat
- For a milder sauce: Remove most of the seeds from the dried chilli and start with less guajillo chilli powder, adding more only after blending and tasting.
- For extra heat: Keep more of the chilli seeds in the sauce or add extra guajillo chilli powder gradually until the heat suits your preference.
- Balance before serving: Lime juice and pickled onion help sharpen the sauce and keep the chilli heat from feeling heavy.
Authenticity notes
- Guadalajara style: Torta ahogada is closely associated with Guadalajara and is defined by the way the filled roll is drenched in chilli-tomato sauce.
- The bread matters: A sturdy crusty white roll is important because it can absorb plenty of sauce without collapsing immediately.
- Sharp finishing touches: Pickled red onion and lime are classic-style finishes that cut through the pork and bring freshness to the soaked sandwich.
Make-ahead tips
- Keep the parts separate: Store the pork, sauce and pickled onion in separate containers so the rolls can be filled and drowned fresh.
- Reheat gently: Warm the pork with a splash of its cooking liquid and heat the sauce gently until piping hot before assembling.
- Assemble at the last moment: Fill the rolls just before serving, then ladle over the sauce so the bread softens without sitting too long.
Texture tips
- Cook until shreddable: The pork is ready when it pulls apart easily with forks; if it resists, give it more gentle simmering time.
- Toast the cut sides: Lightly toasting the rolls helps them absorb the sauce while keeping enough structure for serving.
- Keep the sauce pourable: The sauce should be smooth and loose enough to soak into the bread, not sit on top like a thick salsa.

Ingredients
Instructions
- Cut the pork into large chunks. Roughly chop the white onion and crush 2 garlic cloves, keeping 1 clove for the sauce. Toss the pork with the oregano and 1 tsp of the fine sea salt.
- Heat 1 tbsp of the olive oil in a large pot over medium-high heat. Brown the pork all over for 6 to 8 minutes, then add the white onion, crushed garlic and water. Bring to the boil, then reduce to a gentle simmer, cover and cook for 60 minutes until the pork is very tender.
- Meanwhile, thinly slice the red onion and put it in a bowl with the apple cider vinegar and a pinch of the remaining salt. Scrunch with your hands for 30 seconds, then set aside to pickle, stirring once or twice. Keep at room temperature until serving.
- Core the tomatoes. Snip the dried red chili into a saucepan, cover with water from the measured amount if you like, and simmer for 5 minutes to soften, then drain. Add the tomatoes, remaining garlic clove, guajillo chili powder, black pepper and the remaining salt, then add 200 ml water and simmer for 10 minutes until the tomatoes collapse.
- Blend the tomato and chilli mixture until smooth, adding a splash more water if needed so it pours easily. Taste and adjust with a little more salt if needed. Keep the sauce warm over a very low heat.
- Lift the pork out of the cooking liquid and shred it with two forks; discard any large pieces of fat. Warm the refried beans in a frying pan over low heat with the remaining 1 tbsp olive oil, stirring until smooth and spreadable. Split the rolls and lightly toast the cut sides in the same pan for 1 to 2 minutes.
- Spread the warm refried beans inside the rolls, then pile in the shredded pork. Place each sandwich in a shallow bowl and ladle over plenty of the hot tomato and chilli sauce to ‘drown’ it. Top with the pickled red onion and squeeze over lime, serving extra sauce alongside for dipping.
Recipe notes
Tips
- For a smoother, less bitter sauce, remove the stems and most of the seeds from the dried red chili before simmering.
- If serving anyone who is sensitive to heat, start with 1 tsp guajillo chili powder and add more to taste after blending.
- Keep the sauce hot but not boiling once blended, as hard boiling can dull the fresh tomato flavour.
Substitutions
- Replace apple cider vinegar with white vinegar for a sharper, cleaner pickle.
- Replace guajillo chili powder with smoked paprika for a milder, smoky sauce.
Storage
- Refrigerate up to 3 days
- Store the pork and sauce separately in airtight containers. Reheat the pork with a splash of its cooking liquid and warm the sauce gently in a saucepan until piping hot; assemble sandwiches just before serving. The pickled red onion keeps well in the fridge and is best used within 3 days.
