Tinga de Res (Shredded Beef in Chipotle Tomato Sauce)
Why this recipe works
- Deep savoury base: Browning the beef and softening the onion in the same pot builds a rich foundation before the sauce is added.
- Smoky chipotle sauce: Blended tomato, chipotle, oregano and vinegar create the recognisable tinga balance of smoke, acidity and savoury heat.
- Tender, saucy beef: Slow simmering gives the chuck time to become shreddable, then a final simmer lets the strands absorb the sauce.

Adjust the heat
- For less heat: Start with a smaller amount of chipotle, simmer the sauce, then adjust only if you want more smokiness and spice.
- For more heat: Add extra chipotle gradually and taste after the sauce has simmered, as the flavour becomes more concentrated.
- Keep the sauce balanced: A little vinegar helps sharpen the tomato and chipotle, so the sauce tastes smoky rather than heavy.
Ingredient notes
- Choose a shreddable cut: Beef chuck is well suited to slow simmering because it becomes tender and pulls into strands without drying out.
- Use ripe tomatoes: Ripe tomatoes give the sauce better body and natural sweetness, helping balance the chipotle and vinegar.
- Chipotle sets the character: Chipotle brings both heat and smoke, so adjust it carefully if you want to change the spice level.
Make-ahead tips
- Flavour improves after resting: The beef holds well in the sauce, and the smoky tomato flavour becomes more rounded after chilling overnight.
- Freezes well: Cool completely before freezing, then defrost in the fridge and reheat gently with a splash of water if the sauce has thickened.
- Useful for several meals: Keep the beef saucy and portion it for tacos, bowls, tostadas or quick dinners during the week.
Serving ideas
- Serve with rice or beans: Plain rice, refried beans or black beans work well with the smoky sauce and make the dish more substantial.
- Add fresh contrast: Top with sliced onion, coriander, avocado or a squeeze of lime to balance the rich shredded beef.
- Use as a filling: Spoon the beef into warm tortillas, tostadas or tortas, making sure each portion gets plenty of sauce.

Ingredients
Instructions
- Pat the beef dry and season all over with 1 tsp of the fine sea salt and the black pepper. Peel and thinly slice the white onions, then peel the garlic. Roughly chop the tomatoes.
- Heat the olive oil in a Dutch oven over medium-high heat. Brown the beef well on all sides, 8 to 10 minutes total. Transfer to a plate.
- Add half the sliced onion to the pot and cook over medium heat until softened and lightly golden, 6 to 8 minutes. Add the garlic and cook for 1 minute until fragrant. Pour in the water, scraping up any browned bits.
- Return the beef to the pot and add the bay leaves. Bring to a gentle simmer, then cover and cook on low for 75 to 90 minutes, turning once, until the beef is very tender and pulls apart easily. Lift the beef out to a bowl and discard the bay leaves.
- While the beef cools slightly, add the tomatoes and chipotle pepper to a blender along with about 200 ml of the cooking liquid from the pot. Blend until smooth. Shred the beef into bite-sized strands using two forks.
- Add the remaining onion to the pot and cook over medium heat for 4 to 5 minutes until softened. Stir in the blended tomato mixture, dried oregano, remaining 1 tsp fine sea salt, and the apple cider vinegar. Simmer uncovered for 10 to 12 minutes until the sauce thickens slightly and tastes cooked.
- Return the shredded beef to the pot and stir to coat. Simmer gently for 8 to 10 minutes, adding a splash of water if needed, until the meat has soaked up the sauce and everything is piping hot. Serve hot with plenty of sauce spooned over the beef.
Recipe notes
Tips
- For a smoother sauce, blend for a full minute, then simmer until it darkens slightly and no longer tastes raw.
- If you prefer less heat, start with 1 chipotle pepper, taste the sauce after simmering, then blend in the second only if needed.
- If serving vulnerable groups, ensure the beef is cooked until very tender and piping hot throughout before serving.
Substitutions
- Replace Beef chuck roast with Beef brisket for a similarly shreddable result, allowing a little longer to become tender.
- Replace Apple cider vinegar with White wine vinegar for a cleaner, sharper finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Freeze for up to 3 months; defrost overnight in the fridge and reheat gently in a saucepan with a splash of water until piping hot.
