Costillas de Cerdo en Salsa Roja (Pork Ribs in Red Chilli Sauce)

Costillas de cerdo en salsa roja is a Mexican-style rib dish where tender bone-in pork is coated in a smooth red chilli and tomato sauce. Guajillo and ancho bring gentle heat, earthiness and deep colour, while onion, garlic and cumin give the salsa a rounded savoury base. The ribs are first simmered with aromatics so the meat stays juicy, then finished in the blended sauce until it clings richly to the pork. A little vinegar lifts the chilli-tomato flavour, making the dish satisfying without feeling heavy. Serve with rice or warm tortillas for a generous dinner that makes good use of every spoonful of sauce.

Why this recipe works

  • Layered red sauce: Tomatoes, onion, garlic, cumin, guajillo and ancho build a deep, savoury salsa with gentle heat.
  • Tender ribs: Simmering the ribs first seasons the meat and creates a flavourful cooking liquid for blending into the sauce.
  • Bright finish: Apple cider vinegar sharpens the chilli-tomato sauce so it tastes rounded rather than heavy.

Get the most out of this recipe

Adjust the heat

  • For a milder sauce: Reduce the chilli powder slightly and loosen the salsa with a little extra rib cooking liquid to soften the heat.
  • For more heat: Add more chilli powder gradually while the tomatoes cook, tasting before the sauce is blended.
  • Keep the heat rounded: Let the tomatoes cook down until jammy before blending; this helps the chilli taste deeper and less raw.

Timing notes

  • Most of the time is hands-off: The active work is mainly preparing the salsa; the longer cook comes from gently simmering the ribs until tender.
  • Serve after the final simmer: The last 10 to 15 minutes lets the sauce cling to the ribs and brings everything back to a piping hot finish.

Ingredient notes

  • Chilli character: Guajillo gives the sauce bright red colour and mild fruitiness, while ancho adds deeper, earthier notes.
  • Vinegar balance: Apple cider vinegar adds a rounded tang; white vinegar can be used for a sharper finish.
  • Use the cooking liquid: Blending in some rib cooking liquid gives the salsa body and carries the flavour from the simmered pork.

Make-ahead tips

  • Good the next day: The ribs and sauce hold well in the fridge, and the chilli flavour deepens as it rests.
  • Freezer-friendly: Cool completely before freezing in a sealed container, then defrost overnight in the fridge.
  • Reheat gently: Warm in a saucepan with a splash of water until piping hot, turning the ribs carefully so they stay intact.

  1. Put the pork spare ribs in a large pot with the water, half the white onion, 2 garlic cloves, the bay leaves and 1 tsp of the fine sea salt. Bring to the boil, then reduce to a gentle simmer and cook for 60 to 75 minutes, until the ribs are tender but not falling apart. Skim any foam from the surface as needed.
  2. Meanwhile, roughly chop the remaining white onion and the remaining garlic. Roughly chop the tomatoes. Heat the olive oil in a saucepan over a medium heat, add the onion and cook for 6 to 8 minutes until softened, then add the garlic and cook for 1 minute.
  3. Add the tomatoes, guajillo chili powder, ancho chili powder, ground cumin and the remaining 1 tsp fine sea salt. Cook for 8 to 10 minutes, stirring, until the tomatoes have broken down and the mixture looks jammy. Stir in the apple cider vinegar and cook for 1 minute.
  4. Tip the sauce into a blender and add 250 ml of the rib cooking liquid. Blend until very smooth, then taste and add a pinch more salt if needed. If the sauce is very thick, blend in a splash more cooking liquid to loosen it.
  5. Lift the ribs from the pot with tongs and discard the bay leaves. Return the ribs to the pot (or a clean saucepan) and pour over the blended salsa. Simmer gently for 10 to 15 minutes, turning the ribs to coat, until the sauce clings and the ribs are piping hot.
  6. Serve the ribs with plenty of the red sauce spooned over the top. If you like a looser finish for spooning, stir in a little more of the reserved cooking liquid just before serving.

Tips

  • Keep the simmer gentle when cooking the ribs so the meat stays juicy and the broth remains clear for blending into the salsa.
  • For a smoother, restaurant-style sauce, blend for a full minute, then let it stand for 2 minutes so bubbles settle before simmering with the ribs.
  • If serving vulnerable groups, make sure the ribs are reheated until piping hot all the way through.

Substitutions

  • Replace olive oil with vegetable oil for a more neutral flavour.
  • Replace apple cider vinegar with white vinegar for a sharper tang.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water until piping hot; freeze for up to 2 months and defrost overnight in the fridge before reheating.
