Escudella Catalana (Catalan Beef and Pork Stew with Chickpeas and Pasta)
Why this recipe works
- Deep broth flavour: Browning the beef and pork first creates savoury depth before the long simmer draws flavour from the meat, bones and vegetables.
- Hearty and satisfying: Chickpeas and small pasta turn the broth into a substantial meal while keeping the dish spoonable and warming.
- Built in one pot: The meat, vegetables, legumes and pasta cook in stages in the same stockpot, so the broth becomes the foundation for every component.

Timing notes
- Mostly hands-off cooking: The active work is mainly browning, trimming vegetables and finishing the pasta; most of the time is spent letting the broth simmer gently.
- Serve hot once the pasta is tender: Pastina continues to soften as it sits in the broth, so the best texture comes shortly after it has finished cooking.
Authenticity notes
- Catalan stew tradition: Escudella is associated with Catalan home cooking and is known for its rich meat broth, vegetables and filling additions such as legumes or pasta.
- Flexible small pasta: Pastina keeps the texture delicate, while acini di pepe gives a similar small, rounded pasta bite.
Make-ahead tips
- Make the stew ahead: The broth, meat, vegetables and chickpeas can be cooked in advance, then reheated gently before adding the pasta.
- Freeze in portions: Freeze cooled portions for convenient future meals; thaw overnight in the fridge and reheat until piping hot.
- Loosen if needed: The stew may thicken as it stands, especially once the pasta absorbs liquid, so add a little water while reheating if necessary.
Texture tips
- Keep the simmer gentle: A low, steady simmer helps the meat become tender while keeping the broth clearer than a hard boil would.
- Add pasta at the end: Stirring in the pastina only for the final few minutes prevents it from becoming overly soft in the broth.

Ingredients
Instructions
- Heat the olive oil in a large stockpot over medium-high heat. Season the beef shank and pork shoulder with the salt and pepper, then brown well on all sides, 6 to 8 minutes in total.
- Add the water and bay leaves, scraping up any browned bits from the base of the pot. Bring to a gentle simmer, then reduce the heat to low and cook for 75 minutes, skimming any foam from the surface as needed.
- Meanwhile, trim the leek and rinse well, then cut into thick rounds. Peel the carrots and cut into large chunks; cut the cabbage into wedges.
- Add the leek, carrot and cabbage to the pot. Keep at a steady simmer for 35 to 45 minutes, until the meats are tender and the vegetables are soft but still holding their shape.
- Tip the chickpeas into a colander and rinse briefly, then add them to the broth. Simmer for 10 minutes to warm through and let the flavours meld.
- Stir in the pastina and simmer for 6 to 8 minutes, stirring once or twice, until the pasta is tender. Remove and discard the bay leaves, then taste and adjust seasoning with a little more salt and pepper if needed.
- Ladle into bowls, making sure each serving gets plenty of broth, chickpeas, pasta, vegetables and generous pieces of beef and pork. Serve piping hot.
Recipe notes
Tips
- Keep the simmer gentle rather than boiling hard, so the broth stays clear and the meat stays tender.
- If you are serving children, shred the meat off the bone and cut the vegetables into smaller pieces before ladling up.
- Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, ensure the stew is piping hot throughout before serving.
Substitutions
- Replace pastina with acini di pepe for a similar small pasta texture.
- Replace pork shoulder with pork belly for a richer, more gelatinous broth.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan until piping hot; add a splash of water if it has thickened. Freeze in portions for up to 3 months; thaw overnight in the fridge before reheating.
