Potée Auvergnate (French Cabbage and Pork Stew)

In France’s central Auvergne region, potée auvergnate refers to a generous cabbage-and-pork stew designed for slow, gentle cooking. Green cabbage, potatoes, carrot and leek simmer with pork shoulder and smoked sausage, giving the broth a deep savoury character without heaviness. Garlic, bay and peppercorns keep the seasoning simple, allowing the sweetness of the vegetables and the smokiness of the sausage to come through. Served in deep bowls with potatoes underneath and plenty of broth ladled over, it is rustic, warming and practical: a complete dinner in one pot, with tender meat, soft cabbage and sturdy vegetables that hold their shape.

Why this recipe works

  • Deep savoury broth: Pork shoulder, smoked sausage, bay, garlic and peppercorns build a broth with gentle smoke and plenty of savoury depth.
  • Hearty and satisfying: Potatoes, cabbage and tender pork make the stew substantial without needing a separate starch or sauce.
  • Gentle simmering: Keeping the stew at a low simmer helps the pork become tender while the broth stays clear and clean-tasting.

Authenticity notes

  • Auvergne-style stew: Potée auvergnate belongs to the French tradition of hearty cabbage and pork stews, with smoked sausage and potatoes making it especially robust.
  • Served family-style: The vegetables, pork and sausage are often served generously with the broth, rather than as a refined plated dish.

Timing notes

  • Most of the time is hands-off: The active work is mainly cutting vegetables and skimming the broth; the flavour develops during the slow simmer.
  • Let it stand before serving: A short rest off the heat allows the broth to settle and the flavours to come together before ladling into bowls.

Common mistakes

  • Do not boil hard: A vigorous boil can toughen the pork and make the broth cloudy; keep the liquid barely bubbling.
  • Avoid overcooking the cabbage: Add the cabbage later in the cooking so it softens without collapsing completely.

Make-ahead tips

  • Good the next day: The stew reheats well, and the broth gains depth after chilling overnight.
  • Reheat gently: Warm on the hob until piping hot, adding a little water if the broth has reduced.
  • Freeze in portions: Cool quickly, portion into sealed containers and freeze for convenient future meals.

  1. Cut the pork into large chunks. Pour the chicken stock into a large pot and add the pork, bay leaves, peppercorns and 1 tsp of the fine sea salt. Bring to a gentle simmer, skimming any foam from the surface.
  2. Part-cover and simmer very gently for 60 minutes, adjusting the heat so the broth barely bubbles. The pork should be starting to turn tender. Meanwhile, peel and cut the carrots into thick rounds, slice the leeks, and lightly crush the garlic cloves.
  3. Add the carrots, leeks and garlic to the pot and simmer for 15 minutes. While they cook, cut the cabbage into wedges and peel the potatoes, then cut them into large chunks so they hold their shape. Keep the simmer gentle to avoid breaking up the meat.
  4. Nestle the cabbage wedges and potatoes into the broth, then add the smoked pork sausage. Simmer, part-covered, for 25 to 30 minutes until the potatoes are tender and the cabbage is soft but not falling apart. Taste the broth and season with the remaining 1 tsp fine sea salt if needed.
  5. Lift out the sausage and slice it into thick pieces, then return it to the pot. Let the stew stand off the heat for 5 minutes so the flavours settle. Serve hot, spooning potatoes into bowls first, then topping with cabbage, pork, sausage and plenty of broth.

Recipe notes

Tips

  • Keep the heat low throughout so the pork stays tender and the broth remains clear rather than cloudy.
  • If your smoked pork sausage is already cooked, add it with the cabbage and potatoes as written so it warms through without drying out; if it is raw, make sure it simmers until fully cooked and piping hot.
  • For vulnerable groups, ensure the pork and sausage are cooked through and piping hot before serving.

Substitutions

  • Replace Chicken stock with Vegetable stock for a lighter, less meaty broth.
  • Replace Leek with Yellow onion for a slightly sweeter base.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob until piping hot, adding a splash of water if the broth has reduced. Freeze in portions for up to 2 months; thaw overnight in the fridge before reheating.
