Lasagna alla Bolognese (Bolognese Lasagna with Ragù and Béchamel)
Why this recipe works
- Deep savoury flavour: A slow-cooked ragù made with beef, pork, wine, passata and aromatics develops richness before it is layered into the pasta.
- Creamy, cohesive layers: Béchamel softens the pasta sheets and binds the ragù without making the finished lasagna feel heavy.
- Built for sharing: The baked dish rests before serving, which helps it cut into neat portions for family-style meals.

Authenticity notes
- Bolognese-style layering: Lasagna alla Bolognese is traditionally built with ragù, béchamel and Parmesan, giving it a different character from ricotta-based lasagna.
Timing notes
- Mostly slow simmering: The recipe takes time, but much of it is the ragù gently reducing until thick and spoonable.
- Rest before slicing: Letting the lasagna stand after baking allows the layers to settle so the portions hold their shape.
Common mistakes
- Leaving the ragù too loose: A watery ragù can make the pasta layers slide apart, so reduce it until it looks glossy, thick and spoonable.
- Rushing the béchamel: Whisk the milk in gradually to keep the sauce smooth and avoid lumps.
- Letting the base catch: Keep the ragù at a low simmer and stir occasionally, especially as it thickens.
Make-ahead tips
- Make the ragù in advance: The meat sauce can be prepared ahead and refrigerated, making assembly much quicker on the day of baking.
- Freezes well: Cool completely, wrap well and freeze in portions or as a whole dish, then thaw overnight before reheating until piping hot.

Instructions
- Heat the olive oil and butter in a Dutch oven over medium heat. Finely chop the onion, celery and carrot, then cook with 1 tsp of the salt for 10 to 12 minutes until soft and sweet, not browned.
- Crush in the garlic and cook for 1 minute until fragrant. Add the minced beef and minced pork, increase to medium-high heat, and cook for 8 to 10 minutes, breaking it up, until no longer pink and any liquid has evaporated.
- Pour in the red wine and simmer for 3 to 5 minutes, scraping up any browned bits, until reduced by about half. Stir in the tomato passata, bring to a gentle simmer, then cover slightly and cook on low for 75 to 90 minutes until thick, rich and spoonable.
- While the ragù simmers, make the béchamel: melt the butter in a saucepan over medium heat. Stir in the flour and cook for 2 minutes, then gradually whisk in the milk until smooth.
- Simmer the béchamel gently for 6 to 8 minutes, whisking often, until thick enough to coat the back of a spoon. Grate in a little nutmeg, then season with the remaining salt; take off the heat.
- Heat the oven to 190°C (375°F). Grate the Parmesan, then taste the ragù and adjust with a little more salt if needed.
- Assemble in a baking dish: spread a thin layer of béchamel, then a layer of lasagna noodles, then ragù, then béchamel, and a light sprinkle of Parmesan. Repeat for 3 to 4 layers, finishing with béchamel and the remaining Parmesan.
- Bake for 35 to 40 minutes until bubbling at the edges and golden on top. Rest for 15 minutes before slicing so the layers set neatly.
Recipe notes
Tips
- Keep the ragù at a gentle simmer; if it starts to catch, lower the heat and stir more often until it looks glossy and thick.
- For a lump-free béchamel, add the milk gradually while whisking, and keep the heat moderate so it thickens without scorching.
- If serving vulnerable groups, ensure the lasagna is baked until piping hot all the way through.
Substitutions
- Replace red wine with water for a non-alcoholic ragù; simmer a little longer to concentrate the flavour.
- Replace Parmesan with pecorino romano cheese for a sharper, saltier finish.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate tightly covered. Reheat portions in a 180°C (355°F) oven until piping hot, or microwave on medium in short bursts; add a splash of water if it looks dry. Freeze well wrapped for up to 2 months and thaw overnight in the fridge before reheating.
