Bangers and Mash
Why this recipe works
- Classic comfort: Creamy mash, browned sausages and onion gravy create the rich, hearty balance that makes the dish so satisfying.
- Deeper gravy flavour: Softening the onions before adding flour and stock gives the gravy sweetness, body and savoury depth.
- Smooth mash: Steam-drying the potatoes and adding warm milk help the mash stay creamy rather than watery.

Ingredient notes
- Choose good sausages: Pork sausages are central to the dish, so use ones with a firm texture and well-seasoned flavour.
- Use mashing potatoes: Yukon Gold potatoes give a naturally buttery, smooth mash without becoming too fluffy or dry.
- Stock matters: A well-flavoured beef stock makes the gravy richer and reduces the need for heavy seasoning.
Timing notes
- Use the potato time well: While the potatoes simmer, cook the onions and sausages so the gravy and mash finish at roughly the same time.
- Serve promptly: The mash is at its best just after beating in the warm milk, and the gravy should be hot and glossy when served.
Common mistakes
- Add stock gradually: Pouring the stock in slowly while stirring helps the flour blend smoothly into the gravy.
- Do not rush the onions: Medium heat lets the onions soften and turn lightly golden without catching before the sausages are added.
- Check the sausages: The sausages should be browned outside and piping hot all the way through before serving.

Ingredients
Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water and add 1 tsp of the salt. Bring to the boil, then simmer for 15 to 20 minutes until very tender.
- While the potatoes cook, warm the milk in a small saucepan over low heat until steaming, not boiling. Keep it warm on the lowest heat.
- Halve and thinly slice the onions. Heat the sunflower oil in a large frying pan over medium heat, then add the onions and a pinch of the remaining salt. Cook for 10 to 12 minutes, stirring often, until soft and lightly golden.
- Push the onions to the edges of the pan and add the sausages to the centre. Cook for 10 to 12 minutes, turning regularly, until browned all over and cooked through.
- Transfer the sausages to a plate and keep warm. Add the flour to the onions and cook for 1 minute, stirring until it disappears into the fat. Gradually pour in the beef stock, stirring constantly, then simmer for 6 to 8 minutes until glossy and thick enough to coat the back of a spoon.
- Drain the potatoes well and return them to the hot pot for 1 minute to steam-dry. Mash with the butter, then gradually beat in the warm milk until creamy. Season with the remaining salt and the black pepper.
- Return the sausages to the gravy and warm through for 1 to 2 minutes. Spoon the mash onto plates, top with the sausages and pour over plenty of onion gravy. Serve straight away.
Recipe notes
Tips
- For the smoothest mash, drain the potatoes thoroughly and let them steam-dry before mashing so they do not turn watery.
- If the gravy thickens too much as it sits, loosen it with a splash of beef stock and warm gently until glossy.
- If serving anyone who is vulnerable to foodborne illness, make sure the pork sausage is cooked until piping hot all the way through.
Substitutions
- Replace whole milk with more beef stock for a lighter mash.
- Replace sunflower oil with unsalted butter for richer onion flavour.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in an airtight container. Reheat the sausages and gravy in a saucepan over low heat until piping hot, adding a splash of beef stock to loosen; reheat the mash with a little whole milk, stirring often.
