Air Fryer Croquettes
Why this recipe works
- Crisp coating: Panko breadcrumbs and a light brushing of oil help the croquettes brown evenly in the air fryer without deep-frying.
- Set, savoury filling: A roux-thickened beef ragout firms up when chilled, making it easier to shape while staying soft and rich once heated.
- Good for preparing ahead: The croquettes can be shaped and crumbed in advance, then refrigerated or frozen before cooking.

Timing notes
- Chill until firm: The ragout needs enough time in the fridge to hold its shape. If it still feels loose, chill it a little longer before coating.
- Rest before serving: A short rest after air-frying lets the filling settle slightly, so the croquettes are easier and safer to eat.
Texture tips
- For a neater, crunchier shell: Use a double coating of egg and breadcrumbs if you want a more even crust with extra crunch.
- Keep the coating dry: Brush with oil lightly rather than soaking the breadcrumbs; too much oil can make the crust heavy.
Common mistakes
- Ragout too loose: The filling should pull away from the pan before chilling. If it flows easily, simmer it a little longer so the croquettes do not collapse.
- Overfilling the air fryer: Leave space around each croquette so the hot air can circulate and crisp the coating evenly.
Make-ahead tips
- Freeze before air-frying: Freeze the breadcrumbed, uncooked croquettes on a tray, then cook from frozen at 200°C (390°F) until crisp and piping hot.
- Reheat for best texture: Reheat cooked croquettes in the air fryer at 190°C (375°F) to restore the crisp coating.

Ingredients
Beef ragout
Coating and air frying
Instructions
- Finely chop the onion. Cut the beef into very small pieces so the filling holds together.
- Melt the butter in a saucepan over medium heat. Add the onion and cook for 4 to 5 minutes until softened but not browned.
- Add the beef and cook for 5 to 7 minutes, stirring, until it has lost its raw colour. Season with the salt and pepper.
- Stir in the flour and cook for 1 minute to remove the raw taste. Gradually whisk in the beef stock, then the milk, until smooth.
- Reduce to low and simmer, stirring often, for 12 to 15 minutes until very thick and it pulls away from the pan. Scrape into a bowl and cool for 15 minutes.
- Cover and chill the ragout for 45 minutes, until firm enough to shape. Line a tray to hold the croquettes as you form them.
- Beat the egg in a bowl. Shape the chilled ragout into 6 small cylinders, then coat each in egg and roll in panko breadcrumbs to cover completely.
- Preheat the air fryer to 200°C (390°F) for 3 minutes. Brush the croquettes lightly with sunflower oil, then air-fry for 10 to 12 minutes, turning halfway, until crisp and deep golden.
- Rest for 2 minutes so the filling is less molten. Serve hot with dijon mustard for dipping.
Recipe notes
Tips
- The ragout needs to be very thick before chilling; if it still flows, simmer a little longer so the croquettes hold their shape.
- For a neater crumb, coat each croquette twice: egg, breadcrumbs, then repeat with the remaining egg and breadcrumbs.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a coarser, sharper dip.
- Replace Panko breadcrumbs with breadcrumbs for a tighter, less flaky coating.
Storage
- Refrigerate up to 2 days
- Cool croquettes completely, then refrigerate in a sealed container for up to 2 days. Reheat in the air fryer at 190°C (375°F) for 6 to 8 minutes until piping hot. Freeze breadcrumbed, uncooked croquettes; cook from frozen at 200°C (390°F) for 14 to 16 minutes, turning halfway.
