Flädlesuppe (Swabian Pancake Soup)
Why this recipe works
- Classic pancake ribbons: Thin pancakes are rolled and sliced into narrow strips, giving the soup its recognisable texture and appearance.
- Light but comforting: Clear beef stock keeps the soup savoury and warming, while the pancake ribbons make it satisfying without becoming heavy.
- Simple, controlled cooking: The method uses basic whisking, pan-frying and gentle reheating, with timing cues that help keep the pancakes tender and the broth clear.

Authenticity notes
- Swabian style: Flädlesuppe is associated with Swabian cooking, where thin savoury pancakes are sliced into strips and served in a clear, well-seasoned broth.
- Simple home-style finish: The soup is usually kept uncluttered, with chives adding freshness rather than heavy garnishes or extra vegetables.
Timing notes
- Cool before slicing: Let the pancakes stand briefly before rolling and cutting so the ribbons hold a neater shape.
- Add ribbons near serving: Warm the pancake strips in the stock only briefly, just until heated through, to stop them softening too much.
Ingredient notes
- Use good stock: Because the broth is clear and simple, the flavour of the beef stock is central to the finished soup.
- Add chives at the end: Stirring in most of the chives just before serving preserves their fresh, green flavour.
Make-ahead tips
- Make the pancakes ahead: The pancakes can be cooked in advance, then rolled and sliced shortly before serving.
- Keep broth and ribbons apart: For the best texture, store the stock and pancake ribbons separately, then combine them when reheating.
- Reheat gently: Warm the soup over a low heat until piping hot, avoiding a hard boil so the ribbons stay tender and the broth remains clear.

Instructions
- Pour the beef stock into a saucepan and bring it to a gentle simmer over a low heat. Keep it hot while you make the pancakes, without letting it boil hard.
- Put the plain flour, fine sea salt and black pepper in a mixing bowl. Whisk in the eggs, then gradually whisk in the whole milk until you have a smooth, pourable batter.
- Heat a frying pan over a medium heat and brush with a little sunflower oil. Pour in a thin layer of batter and cook for 45 to 60 seconds until set and lightly golden underneath, then flip and cook 20 to 30 seconds more. Repeat with the remaining batter, oiling the pan as needed.
- Stack the pancakes and roll them up, then slice into thin ribbons. Keep the ribbons loose so they do not clump together.
- Stir the unsalted butter into the hot stock until melted. Add the pancake ribbons and warm through for 1 to 2 minutes, just until heated.
- Finely slice the fresh chives and stir most of them into the soup. Ladle into bowls and scatter over the remaining chives to serve.

Tips
- For the neatest ribbons, let the pancakes cool for 2 to 3 minutes before rolling and slicing.
- Keep the stock at a gentle simmer and only warm the ribbons briefly so they stay distinct rather than turning soft and cloudy.
- If serving anyone vulnerable, use pasteurised eggs and make sure the soup is piping hot before serving.
Substitutions
- Replace sunflower oil with unsalted butter for frying the pancakes for a richer flavour.
- Replace whole milk with lactose-free milk for a similar texture.
Storage
- Refrigerate up to 2 days
- Cool and refrigerate the soup in an airtight container. Reheat gently in a saucepan over a low heat until piping hot, adding a splash of water if it has thickened; avoid boiling hard to keep the ribbons tender.
