Bún Riêu (Crab and Tomato Noodle Soup)

In bún riêu, a gently tangy tomato broth carries the savoury depth of fish sauce and shrimp paste, giving this Vietnamese noodle soup its recognisable brightness and umami. Rice vermicelli makes it light but satisfying, while soft crab and prawn meatballs set in the hot broth add richness without making the soup heavy. Fresh bean sprouts, coriander, spring onion and lime are essential to the way it is eaten, bringing crunch, herbal lift and acidity at the table. It is a soup of clear, lively flavours: seafood sweetness, ripe tomato, salty seasoning and fresh garnish working together in each bowl.

Why this recipe works

  • Savoury depth: Shrimp paste, fish sauce and chicken stock create a deeply savoury base without making the broth heavy.
  • Bright tomato balance: Ripe tomatoes soften into the stock, giving the soup gentle acidity and a light red broth.
  • Fresh contrast: Tender seafood meatballs, soft vermicelli, crisp bean sprouts and fresh herbs give each bowl a clear range of textures.
  • Gentle poaching: Dropping the crab and prawn mixture into a low simmer helps the meatballs set while keeping the broth clearer.

Ingredient notes

  • Shrimp paste: Shrimp paste is assertive but important here; whisk it fully into the stock so it disperses evenly through the broth.
  • Crab meat: Pick over the crab carefully for shell fragments before mixing it with the prawns and egg.
  • Tomatoes: Ripe tomatoes give the broth better sweetness, colour and acidity than very firm or underripe ones.

Texture tips

  • Keep the broth gentle: A steady simmer helps the seafood meatballs hold together; a hard boil can break them apart and cloud the soup.
  • Handle the noodles separately: Cook the vermicelli until just tender, then rinse briefly so it does not continue softening before serving.

Make-ahead tips

  • Separate the broth and noodles: Refrigerate the broth and meatballs separately from the vermicelli where possible to keep the noodles from swelling.
  • Reheat thoroughly: Bring the broth back to a steady simmer until piping hot, then assemble the bowls with noodles and fresh toppings.
  • Add herbs at the end: Bean sprouts, coriander and lime are best added just before eating so they stay crisp and bright.

Authenticity notes

  • Vietnamese home-style serving: The soup is served over rice vermicelli with fresh herbs, sprouts and lime so each bowl can be adjusted at the table.
  • Seafood and tomato base: The combination of tomato broth, crab or prawn mixture, fish sauce and shrimp paste is central to the recognisable flavour of bún riêu.

Instructions

  1. Bring a saucepan of water to the boil. Cook the rice vermicelli according to the packet until just tender, then drain and rinse briefly under cold water to stop it overcooking.
  2. Thinly slice the spring onions and finely grate the garlic. Roughly chop the tomatoes, keeping any juices.
  3. Finely chop the prawns until they are a coarse paste. In a mixing bowl, whisk the eggs, then mix in the prawns, half the spring onion, half the garlic, and the crab meat until just combined.
  4. In a stockpot, bring the chicken stock to a gentle simmer. Add the shrimp paste and whisk until dissolved, then add the tomatoes and simmer for 10 minutes until the tomatoes soften and the broth turns lightly red.
  5. Using two spoons, drop heaped spoonfuls of the crab and prawn mixture into the gently simmering broth. Cook for 6 to 8 minutes until the meatballs are set and float, keeping the heat low so the broth stays clear.
  6. Stir in the fish sauce and the remaining garlic, then simmer for 2 minutes. Taste and adjust with a little more fish sauce if you want it saltier.
  7. Divide the vermicelli between bowls and ladle over the hot tomato broth and meatballs. Top with bean sprouts, the remaining spring onion and fresh coriander, then serve with lime wedges for squeezing over.

Recipe notes

Tips

  • Keep the broth at a gentle simmer when cooking the meatballs; a hard boil can break them up and make the soup cloudy.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the meatballs are cooked through and the soup is piping hot before serving.

Substitutions

  • Replace Fresh coriander with Fresh mint for a different herbal finish.
  • Replace Chicken stock with Vegetable stock for a lighter, less meaty broth.

Storage

  • Refrigerate up to 2 days
  • Cool and refrigerate the broth and meatballs separately from the rice vermicelli if possible. Reheat the broth to a steady simmer until piping hot, then add fresh vermicelli (or briefly dip stored vermicelli in boiling water) before serving; add bean sprouts, coriander and lime at the table.
