Aligot (Stretchy Cheese Mashed Potatoes)
Why this recipe works
- Silky base: Very tender potatoes, cream and butter create a smooth foundation before the cheese is added.
- Classic stretch: Adding the cheese gradually over very low heat helps it melt into the mash and develop aligot’s distinctive elastic pull.
- Deeply comforting: The combination of buttery potatoes, melting cheese and gentle garlic makes it rich, savoury and ideal as a hearty side.

Authenticity notes
- French mountain style: Aligot is closely associated with the Aubrac region, where potatoes are worked with melting cheese until smooth, glossy and elastic.
- Use a good melting Tomme: Tomme gives aligot its characteristic savoury flavour and stretch; a cheese that melts smoothly is essential for the right texture.
Texture tips
- For a silkier mash: Mash the potatoes thoroughly and pass them through a sieve if you want an especially refined texture before adding the dairy.
- Keep the heat gentle: Low heat helps the cheese emulsify into the potatoes instead of turning oily or stringy in separate clumps.
- Loosen if needed: If the mixture feels too stiff, beat in a little warm cream until it becomes supple and stretches easily.
Common mistakes
- Using too much heat: High heat can make the cheese greasy and difficult to incorporate, so keep the pan on the lowest setting once the cheese goes in.
- Leaving watery potatoes: After draining, return the potatoes to the hot pot briefly so excess moisture evaporates; this helps the aligot stay glossy rather than loose.
- Serving too late: Aligot is best served immediately, while hot and elastic, as it firms noticeably once it cools.
Serving ideas
- Serve with robust mains: Pair with roasted vegetables, grilled sausages, braised beef or mushrooms for a hearty meal.
- Keep garnish simple: A little extra white pepper or finely chopped parsley adds freshness without distracting from the cheese pull.

Ingredients
Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water, and add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 18 to 22 minutes until very tender.
- Meanwhile, peel and finely grate the garlic. Grate the Tomme cheese. Keep both ready by the hob so you can work quickly once the potatoes are mashed.
- Drain the potatoes well, then return them to the hot pot over low heat for 1 to 2 minutes to steam off excess moisture. Mash until completely smooth. If you have time, pass the mash through a sieve for an extra-silky texture.
- In a saucepan over low heat, warm the double cream with the garlic, the remaining 1 tsp fine sea salt, and the white pepper until steaming but not boiling. Add the unsalted butter and stir until melted. Pour this into the mash and beat with a wooden spoon until glossy and smooth.
- Keep the pot on very low heat and add the Tomme cheese a handful at a time, stirring vigorously after each addition until fully melted. Continue beating for 3 to 5 minutes until the aligot is stretchy, shiny, and pulls away from the sides in long ribbons. Serve immediately, hot.
Recipe notes
Tips
- For the best stretch, keep the heat low and steady and add the Tomme cheese gradually, stirring hard so it emulsifies rather than turning greasy.
- If the mash feels stiff before the cheese goes in, warm a splash more double cream and beat it in; aligot should be supple enough to stretch.
- Serve straight away: aligot firms up as it cools, and reheating works best gently over low heat with a little extra double cream stirred in.
Substitutions
- Replace Tomme cheese with gruyere-cheese for a slightly nuttier, more assertive flavour and good melt.
- Replace double cream with single-cream for a lighter result, but expect slightly less richness and stretch.
- Replace white pepper with black-pepper for a more pronounced peppery flavour and visible specks.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover, and refrigerate. Reheat gently in a saucepan over low heat, stirring constantly, with a splash of double cream to loosen until piping hot; avoid high heat or it may split.
