Patatas Bravas con Alioli (Fried Potatoes with Bravas Sauce)
Why this recipe works
- Crisp potatoes: Parboiling softens the edges, while steam-drying and a second fry help create a deeply golden, crunchy exterior.
- Layered sauce: Smoked paprika, chilli flakes, garlic, tomato and sherry vinegar build a bravas sauce that is smoky, savoury and gently sharp.
- Classic contrast: The combination of hot crisp potatoes, warm bravas sauce and cool garlicky alioli gives the dish its familiar tapas-bar character.

Adjust the heat
- For less heat: Reduce the chilli flakes and let the smoked paprika carry more of the flavour.
- For extra warmth: Increase the chilli flakes slightly or use smoked hot paprika for a deeper, warmer heat.
- Keep it balanced: Taste the sauce after simmering; a little extra vinegar can sharpen the tomato and stop the heat feeling heavy.
Authenticity notes
- Tapas-style serving: Patatas bravas are usually served as a shared small plate, with the sauce spooned over just before serving.
- Alioli variation: Bravas may be served with bravas sauce alone, with alioli, or with both sauces depending on the bar or region.
- Spanish flavour markers: Smoked paprika and sherry vinegar give the sauce the smoky, tangy profile associated with many bravas-style sauces.
Common mistakes
- Overcrowding the oil: Fry the potatoes in batches so the oil temperature stays steady and the potatoes crisp rather than steam.
- Splitting the alioli: Whisk the oil in very slowly at the start; adding it too quickly can break the emulsion.
- Catching the sauce: Keep the bravas sauce at a gentle simmer and stir more often as it thickens.
Make-ahead tips
- Prepare components ahead: The sauce and alioli can be made in advance and kept chilled separately until serving.
- Keep textures separate: Store the potatoes, sauce and alioli in separate containers so the potatoes do not soften.
- Reheat for crispness: Reheat the potatoes in a 200°C (390°F) oven until piping hot and crisp, then add the sauces just before serving.

Ingredients
Instructions
- Peel the potatoes and cut into roughly 2.5 cm chunks. Put them in a large pot with the water and 1 tsp of the fine sea salt, then bring to the boil. Simmer for 6 to 8 minutes until the edges are just tender but the centres still feel firm.
- Drain well and leave the potatoes in the colander for 5 minutes to steam-dry. Meanwhile, pour the sunflower oil into a deep, heavy pot and heat to 170°C (340°F).
- Fry the potatoes in batches for 6 to 8 minutes until pale golden and cooked through, keeping the oil close to 170°C (340°F). Lift out with a slotted spoon and set aside while you finish the sauce and alioli. Keep the oil on the hob for a final crisping fry later.
- For the bravas sauce, finely grate 1 clove of the garlic into a saucepan. Add the canned tomatoes, smoked paprika, chilli flakes, sherry vinegar, black pepper and the remaining 1 tsp fine sea salt. Simmer gently for 10 to 12 minutes, stirring, until thick enough to spoon.
- For the alioli, finely grate the remaining 2 garlic cloves into a mixing bowl and whisk in the egg yolk. Very slowly whisk in 180 ml of the olive oil, starting drop by drop, until thick and glossy. If it becomes too thick to whisk, loosen with 1 to 2 tsp water from the measured water.
- Increase the sunflower oil temperature to 190°C (375°F). Fry the potatoes again for 2 to 3 minutes until deeply golden and crisp, then drain well. Pile onto a serving plate, spoon over the bravas sauce, and finish with dollops of alioli and a drizzle of the remaining olive oil.
Recipe notes
Tips
- Steam-drying the parboiled potatoes is key: the drier the surface, the crisper the final fry.
- Keep the bravas sauce at a gentle simmer so it reduces without catching; stir more often as it thickens.
- If you are pregnant, elderly, or immunocompromised, use pasteurised egg yolk for the alioli.
Substitutions
- Replace sherry vinegar with red wine vinegar for a similar tang.
- Replace chili flakes with smoked hot paprika for heat with a rounder smokiness.
- Replace olive oil with sunflower oil in the alioli for a milder flavour.
Storage
- Refrigerate up to 2 days
- Store the potatoes, bravas sauce and alioli separately in airtight containers. Reheat the potatoes in a 200°C (390°F) oven for 10 to 12 minutes until piping hot and crisp; warm the sauce gently in a saucepan. Serve the alioli cold.
