Tacos de Canasta (Basket Tacos) with Potato and Chorizo
Why this recipe works
- Steamed for tenderness: Brief steaming softens the tortillas and helps the filling stay moist, giving the tacos their recognisable basket-style texture.
- Flavour between the layers: Guajillo chilli oil adds gentle heat, colour and toasted aroma without overpowering the potato and chorizo filling.
- Hearty filling: Mashed potato stretches the chorizo, absorbs its seasoning and creates a soft, satisfying centre.

Authenticity notes
- Basket taco style: Tacos de canasta are known for their soft, steamy texture rather than a crisp shell, with the tacos packed closely so they stay warm and moist.
- Filling variations: Potato, chorizo, beans and adobo-style fillings are all common approaches; this version keeps the filling hearty and gently spiced.
Ingredient notes
- Guajillo chilli powder: Guajillo brings mild heat, deep red colour and a fruity, toasted flavour. Warm it gently in oil, as overheating can make it bitter.
- Fresh chorizo: Use fresh cooking chorizo rather than cured slicing chorizo, as it browns into the potato and seasons the filling more evenly.
- Corn tortillas: Warm the tortillas before filling so they fold without cracking and settle neatly into the pot.
Texture tips
- Keep the water below the tacos: Pour the water into the base of the pot rather than over the tortillas, so the tacos steam instead of becoming wet.
- Pack them snugly: Arranging the tacos tightly helps them hold their shape while steaming and keeps the filling evenly warmed.
Make-ahead tips
- Make the filling ahead: The potato and chorizo filling can be cooked in advance, chilled, then gently rewarmed before assembling the tacos.
- Reheat covered: Warm leftover tacos in a covered pot with a small splash of water over low heat, or steam them until piping hot.
- Freezer-friendly: Freeze cooled tacos in a sealed container, then defrost overnight in the fridge before reheating until fully hot.

Ingredients
Instructions
- Put the potatoes in a large pot, cover with cold water, and add 1 tsp of the salt. Bring to the boil, then simmer for 12 to 15 minutes until tender when pierced with a knife. Drain well and mash until smooth.
- Meanwhile, heat a frying pan over medium heat and cook the chorizo, breaking it up, for 8 to 10 minutes until browned and cooked through. Add the onion and cook for 4 minutes until softened, then add the garlic for 1 minute until fragrant. Stir in the mashed potatoes and the remaining 1 tsp salt, then take off the heat.
- In a small bowl, stir the guajillo chilli powder into the vegetable oil. Warm it gently in the frying pan for 30 to 60 seconds, just until it smells toasty, then pour back into the bowl.
- Warm the tortillas briefly so they are pliable. Spoon the potato and chorizo filling into each tortilla and fold over to make tacos. Arrange them snugly in a large pot in layers, brushing a little guajillo oil over each layer as you go.
- Pour the water into the bottom of the pot, keeping it away from the tacos as much as possible. Cover tightly and steam over low heat for 10 minutes until the tacos are soft, hot, and moist. Rest, covered, for 5 minutes before serving.
- Serve the tacos with shredded cabbage and lime wedges for squeezing over. If you like, drizzle any remaining guajillo oil over the top.
