Lemongrass Chicken Traybake with Peppers and Jasmine Rice

Lemongrass chicken is known for its fragrant, savoury-sweet profile: citrusy lemongrass, salty fish sauce, lime and a little sugar working together to season the meat deeply and encourage caramelisation. Here those Vietnamese-inspired flavours are turned into a practical traybake, with bone-in chicken thighs roasting over peppers and red onion so the vegetables soften in the pan juices. Jasmine rice makes the meal complete, soaking up the sticky, aromatic sauce, while fresh coriander adds a clean finish. It is a low-effort dinner with enough brightness and depth to feel more considered than a standard roast chicken tray.

Why this recipe works

  • Aromatic marinade: Lemongrass, garlic, fish sauce, lime and brown sugar give the chicken a savoury, citrusy and lightly sweet base.
  • Efficient traybake method: The peppers and onion roast beneath the chicken, absorbing the marinade and pan juices as they soften.
  • Flexible marinating: A short room-temperature marinade works well, while refrigerating the chicken for longer builds deeper flavour.

Ingredient notes

  • Use the tender lemongrass centre: Trim away the tough outer layers and slice the pale inner stalk finely so it softens and releases its aroma during roasting.
  • Fish sauce brings the seasoning: Fish sauce supplies both salt and savoury depth, so taste before adding any extra seasoning at the table.
  • Lime keeps it bright: The lime balances the brown sugar and roasted chicken fat, keeping the tray juices lively rather than heavy.

Timing notes

  • Short or longer marinade: Thirty minutes gives good flavour, but refrigerating the chicken for up to 12 hours makes the lemongrass and fish sauce more pronounced.
  • Take the chill off: If the chicken has been refrigerated, let it stand briefly before roasting so it cooks more evenly.
  • Let the rice stand: Keeping the jasmine rice covered off the heat after cooking helps the grains finish steaming and fluff up cleanly.

Texture tips

  • Roast skin-side up: Keeping the thighs skin-side up exposes them to direct heat, helping the marinade caramelise on the surface.
  • Do not overcrowd the tray: Leave space between the chicken pieces and spread the vegetables in a single layer so they roast rather than steam.
  • Use the tray juices: Spoon the pan juices over the chicken if the tray looks dry; they help glaze the meat and keep the vegetables moist.

Make-ahead tips

  • Marinate in advance: The chicken can be marinated and kept covered in the fridge, ready to roast later the same day.
  • Reheat gently: Warm leftovers in a 200°C (390°F) oven until piping hot, or microwave in short bursts; add a little water to the rice if it seems dry.
  • Freeze cooked portions: Cool completely, freeze in portions, then defrost overnight in the fridge before reheating thoroughly.

  1. Trim the lemongrass, then finely slice the tender inner part. Crush the garlic, zest 1 lime and squeeze both limes.
  2. In a large bowl, mix the lemongrass, garlic, fish sauce, lime zest and juice, light brown sugar, sunflower oil and black pepper. Add the chicken thighs and turn well to coat.
  3. Cover and marinate for 30 minutes at room temperature, or refrigerate for up to 12 hours for deeper flavour. If chilled, bring the chicken back towards room temperature for 15 minutes before roasting.
  4. Heat the oven to 220°C (430°F). Cut the red onion into wedges and slice the red peppers into thick strips.
  5. Arrange the onion and peppers on a large baking tray, then nestle the chicken thighs on top, skin-side up. Pour over any remaining marinade from the bowl.
  6. Roast for 35 to 40 minutes, turning the peppers and onion once halfway through, until the chicken is deeply golden and caramelised and the juices run clear. If the tray looks dry at any point, spoon the pan juices over the chicken.
  7. Meanwhile, rinse the jasmine rice in a colander until the water runs mostly clear. Cook in a saucepan with 450 ml water: bring to the boil, cover, then cook on the lowest heat for 12 minutes; remove from the heat and stand, covered, for 10 minutes.
  8. Roughly chop the fresh coriander. Fluff the rice, then serve with the chicken, peppers and onion, spooning over the tray juices and finishing with coriander.

Recipe notes

Tips

  • For the best caramelisation, spread the peppers and onion in a single layer and leave a little space between the chicken thighs so the heat can circulate.
  • If you marinate the chicken in the fridge, keep it covered and use within 24 hours; discard any leftover marinade that has touched raw chicken.
  • Food safety: make sure the chicken is cooked until piping hot throughout, with clear juices and no pink at the bone.

Substitutions

  • Replace light brown sugar with honey for a slightly rounder sweetness and a glossier finish.
  • Replace red pepper with yellow pepper for a sweeter, milder traybake.
  • Replace jasmine rice with basmati rice, cooking it according to the packet timings.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat in a 200°C (390°F) oven until piping hot, or microwave in short bursts; add a splash of water to the rice if it seems dry. Freeze portions for up to 2 months and defrost overnight in the fridge before reheating.
