Thai Lemongrass Chicken Traybake with Jasmine Rice

A Thai-style chicken traybake brings the fragrant profile of lemongrass, garlic, ginger, lime and fish sauce into an easy oven dinner. Bone-in, skin-on thighs suit this method well: the skin browns and caramelises while the meat stays juicy, and the marinade creates savoury, tangy pan juices for the vegetables. Red pepper and green beans roast alongside the chicken, picking up sweetness and charred edges without needing a separate stir-fry. Served with jasmine rice, fresh coriander and lime wedges, it has the freshness and depth associated with Thai cooking while keeping the preparation practical for a weeknight.

Why this recipe works

  • Aromatic marinade: Lemongrass, ginger, garlic, fish sauce, lime and palm sugar create a savoury, citrusy base with gentle sweetness.
  • Caramelised edges: Bone-in, skin-on thighs roast until the skin colours, while the vegetables pick up glossy pan juices and lightly charred edges.
  • Efficient traybake method: The chicken and vegetables cook together on one tray, with jasmine rice prepared alongside for a complete dinner.

Ingredient notes

  • Use the tender lemongrass core: Trim away the tough outer layers and finely slice the pale inner section so the marinade stays fragrant rather than fibrous.
  • Choose a balanced fish sauce: Fish sauce provides saltiness and depth; if yours is especially strong, adjust the final seasoning with lime rather than adding more salt.
  • Palm sugar helps caramelisation: Palm sugar gives a rounded sweetness and helps the chicken brown; light brown sugar works well if palm sugar is unavailable.

Common mistakes

  • Avoid overcrowding the tray: Give the thighs and vegetables enough space so they roast rather than steam, which helps the edges caramelise.
  • Check bone-in chicken carefully: Bone-in thighs can cook unevenly, so make sure the chicken is piping hot all the way through with no pink at the bone.
  • Watch the sugary marinade: Palm sugar can darken quickly at 220°C (430°F), so keep an eye on the tray towards the end of roasting.

Make-ahead tips

  • Marinate in advance: The chicken can be coated in the marinade ahead of cooking, then brought out of the fridge briefly before roasting.
  • Store rice separately: Keep the rice apart from the chicken and vegetables where possible so it reheats more evenly and does not absorb all the pan juices.
  • Reheat gently: Warm leftovers until piping hot, adding a splash of water to the rice if needed to loosen the grains.

  1. Trim the lemongrass, then finely slice the tender inner part. Peel and grate the garlic and ginger, then mix with the palm sugar, fish sauce and the zest and juice of 1 lime in a large bowl.
  2. Add the chicken thighs and turn to coat well. Leave to marinate for 15 minutes at room temperature while you heat the oven to 220°C (430°F).
  3. Tip the chicken and marinade onto a large baking tray, arranging the thighs skin-side up. Roast for 20 minutes, until the skin is starting to colour.
  4. Meanwhile, rinse the jasmine rice until the water runs mostly clear, then put it in a saucepan with the water. Bring to the boil, cover, reduce to low and cook for 12 minutes, then take off the heat and leave covered for 10 minutes.
  5. Slice the red pepper into thick strips and trim the green beans. Add them to the tray, turning them through the pan juices, then roast for 12–15 minutes until the chicken is cooked through and the vegetables are tender with caramelised edges.
  6. Cut the remaining lime into wedges. Fluff the rice, scatter the coriander over the traybake, and serve with the rice and lime wedges for squeezing.

Recipe notes

Tips

  • For the best flavour, bruise the sliced lemongrass with the back of a knife before mixing it into the marinade.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot all the way through with no pink at the bone.

Substitutions

  • Replace palm sugar with light brown sugar for a similar sweetness and caramelisation.
  • Replace chicken thighs with chicken drumsticks; roast for a similar time, checking they are cooked through at the bone.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate the chicken, vegetables and rice in airtight containers. Reheat in a 180°C (355°F) oven until piping hot, or microwave in covered containers, adding a splash of water to the rice if needed.
