Air Fryer Salmon and Vegetables

Air fryer salmon and vegetables is a compact, one-basket dinner with the ease of a traybake and the speed of an air fryer. Skin-on salmon stays moist as it cooks alongside green beans and cherry tomatoes, which soften, blister and pick up the savoury-sweet coating of soy sauce, honey, ginger and garlic. The result is light but satisfying: flaky fish, tender vegetables, umami depth and a bright lift from lime at the end. Sesame seeds add a simple finishing crunch, making it a practical weeknight meal that still feels fresh and well-rounded.

Why this recipe works

  • Fast cooking: The air fryer cooks the salmon and vegetables quickly, keeping the whole meal comfortably under 30 minutes.
  • Bright finish: A squeeze of lime cuts through the honey-soy glaze and keeps the dish from feeling too rich or sweet.
  • Tender and blistered: The salmon stays soft and flaky while the beans soften and the tomatoes blister, giving the plate useful contrast.

Texture tips

  • Keep the salmon just cooked: Start checking the fish at the earlier end of the cooking time; it should flake easily but still look moist in the centre.
  • Avoid overcrowding: Spread the vegetables in an even layer so the air can circulate and the tomatoes blister rather than steam.

Ingredient swaps

  • Swap the sweetener: Maple syrup can replace honey for a slightly deeper, less floral sweetness.
  • Change the citrus: Lemon works well instead of lime if you want a sharper, more familiar finish.

Common mistakes

  • Browning too quickly: If the glaze darkens before the salmon is cooked through, reduce the air fryer to 190°C (375°F) for the final few minutes.
  • Packing the basket too tightly: A crowded basket traps steam and can leave the vegetables soft rather than lightly blistered.

Make-ahead tips

  • Prep ahead: Trim the beans and mix the glaze in advance, then cook everything just before serving for the best texture.
  • Reheat gently: Warm leftovers in the air fryer at 160°C (320°F) until just piping hot to help prevent the salmon drying out.

  1. Preheat the air fryer to 200°C (390°F) for 3 minutes. Trim the green beans, and keep the cherry tomatoes whole.
  2. In a bowl, stir together the olive oil, soy sauce, honey, finely grated ginger and crushed garlic. Brush or spoon half of this mixture over the salmon, and toss the beans and tomatoes with the remaining mixture.
  3. Put the green beans and cherry tomatoes into the air fryer basket in an even layer. Air-fry for 5 minutes until the beans start to soften and the tomatoes begin to blister.
  4. Nestle the salmon among the vegetables, skin-side down. Air-fry for 7 to 9 minutes, until the salmon is just cooked and flakes easily, and the vegetables are tender.
  5. Squeeze the lime over the salmon and vegetables and sprinkle with the sesame seeds. Serve straight away.

Recipe notes

Tips

  • If the salmon is browning too quickly on top, lower the temperature to 190°C (375°F) for the final few minutes.
  • For even cooking, choose salmon pieces of a similar thickness and place the thicker ends towards the hotter side of your air fryer basket.

Substitutions

  • Replace Honey with Maple syrup for a slightly deeper sweetness.
  • Replace Lime with Lemon for a similar bright finish.

Storage

  • Refrigerate up to 2 days
  • Refrigerate leftovers in an airtight container for up to 2 days. Reheat gently in the air fryer at 160°C (320°F) until just piping hot to avoid drying out the salmon.
