British-Style Butter Chicken Traybake
Why this recipe works
- Traybake efficiency: The chicken, onions and sauce cook together in one tray, giving the sauce roasted flavour with very little hands-on work.
- Built-in depth: Garlic, ginger and spices are warmed in butter before the tomatoes and cream are added, helping the sauce taste rounded rather than flat.
- Rich, spoonable sauce: Double cream softens the acidity of the tomatoes and gives the tray juices a smooth, generous consistency for serving over rice.

Texture tips
- Keep the skin exposed: Position the chicken skin mostly above the sauce so it roasts and colours instead of stewing.
- Let the sauce settle: A short rest after baking helps the creamy sauce come together and makes it easier to spoon over the rice.
Ingredient swaps
- For a lighter sauce: Single cream can replace double cream, though the finished sauce will be thinner and slightly less rich.
- Using chicken breast: Chicken breast cutlets can be used instead of thighs, but start checking early as they dry out more quickly.
Make-ahead tips
- Prep ahead: The onion can be cut and the garlic and ginger prepared in advance to make assembly faster.
- Reheating: Reheat covered in a 180°C (355°F) oven until piping hot, adding a splash of water if the sauce has thickened.
- Freezing: Cooked portions freeze well; defrost overnight in the fridge before reheating thoroughly.
Serving ideas
- Serve with rice: Basmati rice is the natural partner, soaking up the creamy tomato sauce and roasted onion juices.
- Finish fresh: Fresh coriander adds brightness against the rich sauce just before serving.

Instructions
- Heat the oven to 200°C (390°F). Cut the onion into thick wedges and place in a large baking tray.
- Melt the butter in a saucepan over low heat. Finely grate the garlic and ginger into the butter, then stir in the garam masala and ground cumin for 30 seconds until fragrant.
- Stir in the tomatoes and bring to a gentle simmer for 3 to 4 minutes to take the raw edge off. Take off the heat and stir in the double cream.
- Nestle the chicken thighs among the onions, then pour the sauce over and around the chicken. Turn the thighs so they are well coated, keeping the skin mostly above the sauce so it browns.
- Bake for 35 to 40 minutes, until the chicken is cooked through and the onions are soft and sticky. If you want more colour, spoon a little sauce off the skin and return to the oven for 5 minutes.
- Meanwhile, cook the basmati rice according to the packet instructions, then drain well. Roughly chop the coriander.
- Rest the traybake for 5 minutes so the sauce settles slightly. Scatter over the coriander and serve with the rice, spooning plenty of sauce and onions over each portion.
Recipe notes
Tips
- For the best texture, keep the chicken skin above the sauce so it roasts rather than stews.
- If serving vulnerable groups, make sure the chicken is piping hot all the way through before serving.
Substitutions
- Replace double cream with single cream for a lighter sauce, but expect it to be a little thinner.
- Replace chicken thighs with chicken breast cutlets; start checking for doneness after 20 minutes so they do not dry out.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate in a sealed container. Reheat in a 180°C (355°F) oven, covered, for 15 to 20 minutes until piping hot; add a splash of water if the sauce has thickened. Freeze portions for up to 2 months and defrost overnight in the fridge before reheating.
