Tandoori Chicken Traybake (Oven-Baked Spiced Chicken)

Inspired by tandoori-style cooking, this traybake brings the familiar yoghurt-marinated chicken and warm spice profile into an everyday oven format. The marinade gives the thighs tang from lemon and yoghurt, depth from garlic, ginger, cumin and coriander, and a gentle red chilli warmth from Kashmiri chilli powder. As the chicken roasts, the edges brown and lightly char while red onion and peppers soften in the spiced juices. A cucumber and mint yoghurt served alongside keeps the dish fresh, cooling and easy to plate with rice, flatbreads or a simple salad.

Why this recipe works

  • Spiced yoghurt marinade: Yoghurt, lemon, garlic, ginger and ground spices cling to the chicken, building flavour before it goes into the oven.
  • Traybake efficiency: The onions and peppers roast alongside the chicken, softening in the spiced juices while keeping the cooking simple.
  • Freshness against the heat: Lemon in the marinade and a cool cucumber-mint side balance the chilli warmth and roasted richness.

Adjust the heat

  • For a milder traybake: Swap the Kashmiri chilli for smoked paprika, or use a lighter hand with the chilli and adjust to taste.
  • For more heat: Add a hotter chilli powder alongside the Kashmiri chilli if you want sharper heat without losing the colour.
  • Keep the cooling element: Serve the cucumber and mint fresh and cold; it softens the spice and brightens the roasted chicken.

Ingredient notes

  • Kashmiri chilli: Kashmiri chilli gives the chicken its warm red colour and a rounded, moderate heat rather than intense fire.
  • Chicken thighs: Bone-in, skin-on thighs suit this high-heat roast because they stay juicy while the surface browns well.
  • Cucumber prep: Squeeze out excess cucumber liquid before mixing with mint so the side stays crisp rather than watery.

Make-ahead tips

  • Marinate in advance: The chicken can be coated and refrigerated for up to 12 hours, which gives the spices more time to season the meat.
  • Keep the fresh side separate: Store the cucumber and mint separately from the chicken and vegetables so it stays fresh after reheating.
  • Reheat properly: Reheat the chicken and vegetables on a baking tray at 200°C (390°F) until piping hot, then add the cucumber and mint afterwards.

Common mistakes

  • Crowding the tray: Give the chicken and vegetables enough space on the tray so they roast and brown rather than steam.
  • Using chicken breast: Chicken breast cutlets cook faster than thighs, so reduce the roasting time and check them earlier.
  • Grilling at the end: If you finish the chicken under the grill for extra char, watch it closely because the yoghurt marinade can darken quickly.

  1. In a large bowl, mix the yogurt with the zest and juice of the lemon, finely grated garlic and ginger, ground cumin, ground coriander, ground Kashmiri chilli, olive oil and fine sea salt. Add the chicken thighs and turn well to coat, working the marinade into any folds. Cover and marinate in the fridge for 45 minutes.
  2. Heat the oven to 220°C (430°F). Cut the red onion into wedges and the red peppers into thick strips, then spread them on a baking tray. Nestle the marinated chicken among the vegetables and scrape over any remaining marinade.
  3. Roast for 30 to 35 minutes, turning the peppers once halfway through, until the chicken is deeply browned at the edges and cooked through. If you want more charring, grill for 2 to 4 minutes at the end, watching closely. Rest for 5 minutes before serving.
  4. Meanwhile, coarsely grate the cucumber, then squeeze out excess liquid with your hands. Finely chop the fresh mint and stir it into the cucumber. Serve alongside the traybake, spooned over the chicken as you eat.

Recipe notes

Tips

  • For the best flavour, marinate the chicken for up to 12 hours in the fridge, then bring it back towards room temperature for 15 minutes before roasting.
  • If serving anyone who is pregnant, elderly, or immunocompromised, use pasteurised yogurt and make sure the chicken is cooked until piping hot throughout.

Substitutions

  • Replace Chicken thighs with Chicken breast cutlets; roast for 18 to 22 minutes, as they cook faster.
  • Replace Ground Kashmiri chili with Smoked paprika for a milder, smokier heat.

Storage

  • Refrigerate up to 3 days
  • Cool the chicken and vegetables quickly, then refrigerate in a sealed container. Reheat on a baking tray at 200°C (390°F) until piping hot; keep the cucumber and mint mixture separate and add fresh after reheating.
