Pain d’Épices (French Honey and Rye Gingerbread Loaf)
Why this recipe works
- Classic honey loaf method: Warming the honey, butter and milk before mixing helps create a smooth batter and evenly distributed sweetness.
- Deep spice aroma: Rye flour, warm spices and dried citrus zest give the loaf its distinctive fragrant, slightly rustic character.
- Improves as it rests: The crumb settles after cooling, and the spice and honey flavours become rounder if the loaf is left to stand before slicing.

Timing notes
- Cool fully before slicing: The loaf slices most cleanly once completely cool; cutting too early can make the crumb seem sticky or fragile.
- Allow a short rest: A rest of at least 2 hours gives the texture time to settle and makes the spice flavour more rounded.
- Even better the next day: For a deeper spice note and neater slices, wrap the cooled loaf and leave it overnight before serving.
Ingredient notes
- Rye flour matters: Rye gives pain d’épices its characteristic close crumb and gently earthy flavour, which balances the sweetness of the honey.
- Use fresh spices: Ground ginger, cinnamon and cloves lose aroma over time, so fresher spices will give a clearer, warmer flavour.
- Citrus lifts the loaf: Dried orange zest adds brightness against the honey and rye; lemon extract gives a sharper alternative if preferred.
Texture tips
- Whisk until smooth: Mix the flour and spices into the honey mixture until no dry patches remain, but stop once the batter is even.
- Protect the top if needed: If the loaf browns before the centre is baked, cover it loosely and continue baking until a skewer comes out clean.
- Let the crumb firm up: Cooling in the tin briefly before transferring to a rack helps the loaf hold its shape without becoming damp.
Make-ahead tips
- Bake ahead: Pain d’épices keeps well, making it useful for preparing a day before serving.
- Freeze sliced or whole: Wrap the cooled loaf well before freezing; slices are convenient if you want to defrost only what you need.
- Refresh gently: Defrost at room temperature, then warm slices briefly in a low oven if you prefer a softer, more aromatic serve.

Ingredients
Instructions
- Heat the oven to 160°C (320°F). Lightly grease a loaf tin with a little of the butter.
- Put the remaining butter, honey and milk in a saucepan over low heat and warm gently until the butter has melted and the mixture is smooth. Take off the heat and leave to cool until just warm to the touch.
- In a mixing bowl, whisk the egg, then whisk in the warm honey mixture. Add the rye flour, ground ginger, ground cinnamon, ground cloves, dried orange zest and fine sea salt, and whisk until smooth.
- Whisk in the bicarbonate of soda. Pour the batter into the prepared tin and tap the tin lightly on the worktop to level it.
- Bake for 50 to 60 minutes, until the loaf is risen and a skewer inserted into the centre comes out clean. If the top is browning too quickly, loosely cover and continue baking until done.
- Cool in the tin for 10 minutes, then turn out onto a rack to cool completely before slicing. For the best texture and flavour, leave it to stand for at least 2 hours before serving.
Recipe notes
Tips
- For neat slices, wait until the loaf is completely cool, then use a serrated knife and a gentle sawing motion.
- If you like a deeper spice note, let the loaf rest overnight before slicing; the flavours mellow and round out.
- Food safety: this loaf contains egg, so ensure it is baked through; avoid underbaking for young children, pregnant people, older adults, and anyone immunocompromised.
Substitutions
- Replace whole milk with lactose-free milk for a similar richness.
- Replace dried orange zest with lemon extract for a different citrus note.
Storage
- Refrigerate up to 5 days
- Store wrapped airtight at cool room temperature for up to 4 days, or in the fridge for up to 5 days. Freeze sliced or whole, well wrapped, for up to 2 months; defrost at room temperature and refresh slices briefly in a low oven if you like.
