Pepernoten (Dutch Spiced Cookies)
Why this recipe works
- Warm spice depth: Cinnamon, ginger and cloves give the cookies their recognisable Dutch spice profile without overpowering the brown sugar.
- Crisp after cooling: The small nugget shape bakes through quickly, then firms and crisps as the cookies cool completely.
- Simple shaping: The dough is mixed by hand and rolled into small pieces, so there is no cutting, chilling or special decorating required.

Ingredient notes
- Use dark brown sugar for depth: Dark brown sugar gives a deeper, slightly treacly flavour. Light brown sugar works too, but the cookies will taste milder.
- Keep the spice blend balanced: Cinnamon forms the base, while ginger and cloves add warmth and sharper spice. Avoid increasing cloves too heavily, as they can dominate.
Texture tips
- For a crisper finish: Bake until the smallest cookies just begin to deepen in colour, then let them cool fully before judging the texture.
- Avoid over-browning: The cookies should feel dry and firm, not deeply browned. Their texture continues to set as they cool.
Make-ahead tips
- Bake ahead: These cookies keep well once completely cooled, making them practical for festive baking or gifting.
- Freeze after baking: Freeze the cooled cookies in a sealed container, then defrost at room temperature. Refresh briefly in a 160°C (320°F) oven if they need crisping.
Authenticity notes
- Sinterklaas baking: Pepernoten-style spiced cookies are strongly associated with the Dutch Sinterklaas season and are usually served as small, shareable sweets.
- Pepernoten and kruidnoten: In Dutch baking, the names are sometimes used loosely. Crisp, round spiced nuggets like these are often closer in style to kruidnoten.

Ingredients
Instructions
- Heat the oven to 160°C (320°F). Line a baking tray with baking paper.
- In a mixing bowl, whisk together the plain flour, baking powder, ground cinnamon, ground ginger, ground cloves and fine sea salt until evenly combined.
- In a second bowl, rub the unsalted butter into the dark brown sugar with your fingertips until it looks like damp sand and no large butter pieces remain.
- Add the flour mixture to the butter and sugar, then pour in the whole milk. Mix to a firm dough that holds together; if it seems crumbly, keep mixing for 30 seconds before adding a tiny splash more milk only if needed.
- Pinch off small pieces of dough and roll into nuggets about the size of a marble. Arrange on the tray with a little space between them; they will spread slightly.
- Bake for 15 to 18 minutes until the cookies are dry on the surface and feel firm when nudged, but not deeply browned. Cool on the tray for 5 minutes, then transfer to a rack to cool completely and crisp up.
Recipe notes
Tips
- Keep the nuggets small and fairly even so they bake through and crisp at the same time.
- For a crisper finish, bake until the smallest cookies are just starting to deepen in colour, then let them cool fully before judging the texture.
Substitutions
- Replace whole milk with lactose-free-milk in the same amount.
- Replace dark brown sugar with light-brown-sugar for a lighter, less treacly flavour.
Storage
- Store completely cooled cookies in an airtight container at room temperature for up to 7 days. Freeze in a sealed container for up to 2 months; defrost at room temperature, then refresh in a 160°C (320°F) oven for 3 to 5 minutes if needed.
