Gevulde Speculaas (Spiced Biscuit Bake with Almond Paste)

Gevulde speculaas sits somewhere between a spiced biscuit, a filled pastry and a tray bake, with the unmistakable warmth of Dutch speculaas spices running through a buttery brown-sugar dough. The centre is a smooth layer of sweet almond paste, sealed between two thin sheets of dough so the bake turns crisp and deeply golden at the edges while staying rich and tender inside. Traditionally served in neat squares with coffee or tea, it is the kind of bake that benefits from cooling properly: the filling settles, the biscuit firms, and the spice becomes more rounded.

Why this recipe works

  • Warm spiced depth: Speculaas spice and light brown sugar give the biscuit layers a fragrant, caramelised flavour.
  • Crisp outside, soft centre: Chilling the dough helps it roll cleanly and bake into a crisp shell around the dense almond filling.
  • Good for baking ahead: The baked squares keep well in an airtight container and can be frozen once fully cooled.

Timing notes

  • Chill before rolling: The dough needs time to firm up so it can be rolled without sticking or tearing.
  • Cool before serving: Let the bake cool on the tray before slicing so the almond filling settles and the biscuit firms.

Texture tips

  • For a neater crust: Seal the edges firmly before baking to keep the almond paste enclosed and the layers defined.
  • Keep the dough short: Bring the dough together just until firm; overworking can make the baked biscuit tougher.

Ingredient notes

  • Speculaas spice: A proper speculaas spice blend gives the bake its recognisable Dutch flavour, usually built around cinnamon with warming supporting spices.
  • Almond paste texture: If the almond paste is stiff, soften it with the egg until smooth enough to spread evenly.

Make-ahead tips

  • Freeze after baking: Freeze fully cooled squares, then defrost at room temperature before serving.
  • Refresh the texture: To restore crispness after freezing, warm the defrosted squares briefly in a 160°C (320°F) oven.

  1. In a mixing bowl, whisk together the flour, baking powder, speculaas spice mix and salt. Add the light brown sugar and rub in the cold butter with your fingertips until the mixture looks like fine crumbs. Add the milk and bring it together into a firm dough without overworking it.
  2. Divide the dough into two pieces, one slightly larger than the other. Wrap and chill for 45 minutes so it rolls cleanly and bakes up crisp. Meanwhile, line a baking tray with a baking mat.
  3. Put the almond paste in a bowl and beat in half the egg to make a smooth, pipeable filling; reserve the remaining egg for glazing. If the paste is very stiff, work it with a spoon until pliable. Preheat the oven to 170°C (340°F).
  4. Roll the larger piece of dough into a rectangle about 0.5 cm thick and set it on the lined tray. Spread the almond paste evenly over the dough, leaving a 1 cm border all around. Roll the smaller piece of dough to the same size and lay it over the filling, then press the edges to seal.
  5. Brush the top with the reserved egg and scatter over the sliced almonds, pressing them in lightly so they stick. Bake for 25 to 30 minutes until deeply golden and set, rotating the tray halfway through for even colour. Cool on the tray for 20 minutes before slicing into squares.

Recipe notes

Tips

  • If the dough cracks as you roll, let it sit at room temperature for 5 minutes, then roll again with light pressure.
  • For neat squares, slice while still slightly warm, then leave to cool completely so the biscuit firms up.
  • Eggs are lightly cooked in this bake, but if you are pregnant, elderly, or immunocompromised, use a pasteurised egg for the glaze.

Substitutions

  • Replace Whole milk with the same amount of water for a slightly crisper, less rich dough.
  • Replace Light brown sugar with Granulated sugar for a lighter colour and a cleaner sweetness.

Storage

  • Refrigerate up to 5 days
  • Store in an airtight container at room temperature for up to 5 days. Freeze the baked, fully cooled squares for up to 2 months; defrost at room temperature, then refresh in a 160°C (320°F) oven for 5 to 7 minutes to re-crisp.
