Moroccan Couscous with Lamb, Chickpeas and Vegetables
Why this recipe works
- Aromatic base: Browning the lamb first and briefly cooking the garlic and spices gives the broth a deeper savoury backbone.
- Tender, hearty finish: A low simmer gives the lamb time to soften while the chickpeas and vegetables make the stew substantial.
- Good for planning ahead: The stew stores well and can be reheated separately from the couscous, which helps preserve the right texture.

Timing notes
- Mostly simmering time: The active work is mainly chopping and browning; the longer cooking time is what makes the lamb tender.
- Serve the couscous fresh: Prepare the couscous just before serving so it stays light, separate and ready to soak up the stew.
Ingredient notes
- Use fresh, fragrant spices: Ground cumin, ginger and turmeric are central to the flavour, so replace any spices that smell flat or dusty.
- Cut vegetables generously: Thick carrot coins and larger courgette chunks hold their shape better during simmering.
- Season the broth at the end: Taste after the final simmer, as the broth will concentrate slightly while the vegetables and lamb cook.
Common mistakes
- Boiling too hard: Keep the stew at a gentle simmer; a rapid boil can make the lamb tighten before it has time to become tender.
- Adding courgette too early: Courgette cooks quickly, so add it near the end to stop it collapsing into the broth.
- Letting the broth go too dry: The stew should be spoonable enough to moisten the couscous; add a splash of water if it reduces too much.
Make-ahead tips
- Keep couscous and stew apart: Separate storage prevents the couscous from absorbing too much liquid and becoming heavy.
- Reheat gently: Warm the stew over low heat with a little water if needed, then fluff the couscous separately before serving.
- Freeze the stew only: The lamb and vegetable stew freezes well, while couscous is best made fresh or stored in the fridge for short-term use.

Instructions
- Halve and thinly slice the onion. Cut the lamb into bite-sized pieces, peel and cut the carrots into thick coins, and cut the courgettes into large chunks. Drain and rinse the chickpeas, then finely chop the coriander.
- Heat the olive oil in a large pot over medium-high heat. Add the lamb and cook for 6 to 8 minutes, turning, until well browned. Add the onion and cook for 4 minutes until starting to soften.
- Stir in the garlic, ground cumin, ground ginger and ground turmeric and cook for 1 minute until fragrant. Add the carrots, chickpeas, water, fine sea salt and black pepper, then bring to a gentle simmer. Cover and cook on low for 55 minutes, stirring occasionally, until the lamb is tender.
- Add the courgette and simmer, uncovered, for 10 to 12 minutes until tender but still holding its shape and the broth tastes well seasoned. If needed, simmer a little longer to reduce slightly, or add a splash of water if it looks dry. Keep the stew on a very low heat while you prepare the couscous.
- Put the couscous in a saucepan and stir through the olive oil and fine sea salt. Pour over the boiling water, cover tightly, and leave off the heat for 5 minutes. Fluff with a fork until light and separate.
- Spoon the couscous into bowls and ladle the lamb and vegetable stew over the top. Finish with the fresh coriander. Serve straight away while piping hot.
Recipe notes
Tips
- For the best texture, keep the stew at a gentle simmer rather than a rapid boil so the lamb turns tender without drying out.
- If you are serving children, keep the black pepper modest and let everyone season at the table.
Substitutions
- Replace Fresh coriander with Fresh flat-leaf parsley for a milder, more grassy finish.
- Replace Courgette with Butternut squash, adding it with the carrots so it has time to soften.
Storage
- Refrigerate up to 3 days
- Store the stew and couscous separately in airtight containers. Reheat the stew in a saucepan over low heat with a splash of water until piping hot; reheat the couscous in the microwave with a spoonful of water, then fluff with a fork. Freeze the stew only for up to 3 months; defrost overnight in the fridge before reheating.
