Indian Lentil Veg Bowl (Lentils with Spiced Vegetables)
Why this recipe works
- Creamy lentil base: Red lentils break down as they simmer, creating a naturally thick, spoonable texture without needing cream or coconut milk.
- Simple spice base: Cooking the onion, garlic, ginger, cumin and turmeric before adding the lentils gives the bowl a warmer, more rounded flavour.
- Good for leftovers: The lentil and vegetable mixture keeps well, reheats easily with a splash of water and can be frozen separately from the rice.

Ingredient notes
- Use red lentils: Red lentils are ideal here because they soften quickly and thicken the sauce as they cook.
- Cut vegetables evenly: Small, even dice help the carrots and courgette cook through without leaving large firm pieces in the bowl.
- Finish with fresh herbs: Fresh coriander adds brightness at the end; mint also works if you prefer a cooler, fresher finish.
Texture tips
- For a thicker bowl: Simmer uncovered briefly at the end, stirring often so the lentils do not catch on the base of the pot.
- For a looser consistency: Add a splash of water and simmer gently until the lentils loosen into a softer, saucier texture.
- Keep courgette tender: Add the courgette after the carrots so it softens without collapsing into the lentils.
Make-ahead tips
- Store rice separately: Keep the lentils and rice in separate containers so the rice does not absorb too much moisture.
- Freeze the lentils: The lentil and vegetable mixture freezes well; defrost overnight in the fridge before reheating.
- Reheat gently: Warm the lentils over low heat with a splash of water, stirring until piping hot.

Ingredients
Instructions
- Rinse the basmati rice in a colander until the water runs mostly clear. Put it in a saucepan with 300 ml water and 0.25 tsp fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave covered for 10 minutes.
- Meanwhile, finely chop the onion, crush the garlic, and grate the ginger. Peel the carrots and cut into small dice; dice the courgette to a similar size. Roughly chop the fresh coriander.
- Heat the olive oil in a large pot over medium heat. Add the onion with a pinch of the remaining salt and cook for 5 minutes until softened. Stir in the garlic, ginger, ground cumin and ground turmeric and cook for 1 minute until fragrant.
- Stir in the canned chopped tomatoes, red lentils, remaining 400 ml water, remaining salt and the black pepper. Bring to a gentle simmer, then cook for 12 minutes, stirring often, until the lentils are soft and the mixture is thick. If it starts to catch, loosen with a splash of water.
- Add the carrots and cook for 6 minutes, then add the courgette and cook for a further 5 to 7 minutes until the vegetables are tender and the lentils are creamy. Taste and adjust seasoning with a little more fine sea salt and black pepper if needed. Stir through most of the fresh coriander, reserving a little to finish.
- Fluff the rice with a fork and divide between two bowls. Spoon the lentils and spiced vegetables over the top. Finish with the reserved fresh coriander and serve hot.
Recipe notes
Tips
- Keep the lentils at a gentle simmer and stir regularly, especially towards the end, to stop them catching on the base of the pot.
- For a looser bowl, add a little extra water at the end and simmer for 1 minute; for a thicker bowl, simmer uncovered for 2 to 3 minutes, stirring often.
Substitutions
- Replace Fresh coriander with Fresh mint for a different, fresher finish.
- Replace Courgette with Aubergine; dice it small and add it with the carrots so it has time to soften.
Storage
- Refrigerate up to 3 days
- Cool the lentils and vegetables quickly, then refrigerate in a sealed container. Reheat in a saucepan with a splash of water over low heat until piping hot; store rice separately and reheat with a tablespoon of water in a covered saucepan or microwave until piping hot. Freeze the lentil and vegetable mixture for up to 2 months; defrost overnight in the fridge before reheating.
