Modern Lentil Curry Bowl

A lentil curry bowl takes the comfort of a dal-style curry and turns it into a complete, spoonable dinner with rice. Red lentils soften quickly into a creamy sauce, helped by coconut milk, ripe tomato and a base of onion, garlic, ginger, cumin, turmeric and garam masala. The result is gently spiced rather than heavy, with lime juice and fresh coriander added at the end to sharpen the richness. Served over fluffy basmati, it is practical for weeknights, naturally vegan, and easy to loosen with a little water if you prefer a more soupy bowl.

Why this recipe works

  • Naturally creamy texture: Red lentils soften and break down as they simmer, thickening the curry without needing cream.
  • Bright finish: Lime juice and fresh coriander lift the richness of the coconut milk and keep the bowl from tasting heavy.
  • Good for planning ahead: The lentil curry stores and reheats well, especially when the rice is kept separately for better texture.

Texture tips

  • For a creamier curry: Keep the heat gentle and stir often towards the end so the lentils break down evenly and the coconut milk stays smooth.
  • For a looser bowl: Add a little water near the end and simmer briefly until the curry returns to a gentle bubble.

Make-ahead tips

  • Store rice separately: Keep the curry and basmati rice in separate containers where possible, so the rice stays fluffy when reheated.
  • Reheat gently: Warm the curry in a saucepan over a low heat with a splash of water, stirring until piping hot throughout.
  • Freezer-friendly: Freeze the cooled lentil curry in sealed containers, then thaw and reheat gently with a little extra water to loosen the sauce.

Ingredient notes

  • Use red lentils for the right texture: Red lentils are ideal here because they soften quickly and collapse into the sauce, giving the curry its creamy consistency.
  • Fresh aromatics matter: Fresh garlic and ginger give the curry a brighter, more rounded base than dried substitutes.
  • Add lime to taste: Stir in most of the lime at the end, then adjust with an extra squeeze in the bowl for a fresher finish.

  1. Rinse the basmati rice in a colander under cold water until the water runs mostly clear. Tip into a saucepan with 400 ml water and 0.5 tsp of the fine sea salt, bring to the boil, then cover and cook on the lowest heat for 10 minutes. Take off the heat and leave, covered, for 10 minutes.
  2. Meanwhile, heat the vegetable oil in a large pot over a medium heat. Finely chop the yellow onion, then cook for 6 to 8 minutes until softened and lightly golden. Grate the garlic and ginger, add to the pot, and cook for 1 minute until fragrant.
  3. Stir in the ground cumin, ground turmeric and garam masala and cook for 30 seconds, stirring so the spices do not catch. Add the tomatoes and 300 ml water, then bring to a gentle simmer. Cook for 5 minutes to soften the tomatoes and start building the sauce.
  4. Rinse the red lentils, then stir them into the pot along with the coconut milk and the remaining 0.5 tsp fine sea salt. Simmer gently for 12 to 15 minutes, stirring often, until the lentils have broken down and the curry is creamy; add a splash of water if it thickens too quickly. Taste and adjust salt if needed.
  5. Juice the lime and stir most of the juice into the curry. Roughly chop the fresh coriander and fold most through, saving a little for the top. Fluff the rice, divide between bowls, ladle over the lentil curry, and finish with the remaining coriander and a final squeeze of lime to taste.
