Buffalo Wings with Blue Cheese Dip
Why this recipe works
- Crisp skin without frying: Drying the wings well and baking them in a single layer at 220°C (430°F) helps the skin turn deeply golden before the sauce goes on.
- Glossy Buffalo coating: Warming the wing sauce with butter gives the wings a smooth, clingy coating with heat, tang and savoury richness.
- Cooling contrast: Blue cheese dip and chilled celery balance the spicy wings with sharp creaminess and fresh crunch.

Adjust the heat
- For a milder version: Choose a milder Buffalo wing sauce and serve plenty of dip on the side to soften the heat.
- For extra heat: Use a hotter wing sauce, or finish with a little extra sauce after tossing if you want a sharper kick.
- Keep the heat balanced: Toss the wings just before serving so the sauce stays bright, then pair each portion with celery and blue cheese dip.
Texture tips
- Dry the wings thoroughly: Moisture on the skin slows browning, so pat the wings very dry before seasoning.
- Sauce at the end: Bake the wings until crisp before coating them; adding the sauce too early softens the skin.
- Set a thicker glaze: For a stickier coating, return the sauced wings briefly to the oven so the sauce clings more firmly.
Make-ahead tips
- Make the dip ahead: The blue cheese dip can be mixed in advance and kept chilled, which also lets the cheese flavour develop.
- Store separately: Keep leftover wings and dip in separate airtight containers so the dip stays fresh and the wings reheat better.
- Reheat for better texture: Reheat wings on a baking tray at 200°C (390°F) until piping hot, then refresh with a little extra Buffalo sauce if needed.
Authenticity notes
- Buffalo-style wings: Buffalo wings are known for crisp chicken wings tossed in a buttery hot sauce rather than being served with the sauce on the side.
- The classic cooling sides: Celery sticks and blue cheese dip are the familiar counterpoints, cutting through the heat with crunch, tang and creaminess.

Instructions
- Heat the oven to 220°C (430°F). Pat the wings very dry, then toss with the fine sea salt, ground garlic and black pepper.
- Arrange the wings in a single layer on a baking tray. Bake for 40 minutes, turning once halfway through, until deeply golden and the skin looks crisp.
- Meanwhile, make the dip: stir the sour cream and blue cheese together, crushing some of the cheese so it partly melts into the mixture. Cut the celery into sticks and keep chilled.
- Warm the butter and buffalo wing sauce in a small saucepan over low heat just until the butter melts and the sauce looks glossy. Tip the hot wings into a mixing bowl, pour over the sauce, and toss with tongs until evenly coated.

Tips
- For the crispest skin, dry the wings thoroughly before seasoning and avoid overcrowding the tray.
- If you like a thicker coating, return the sauced wings to the tray and bake for 5 minutes to help the sauce cling.
- Food safety: make sure the wings are cooked through and piping hot, with no pink at the bone and the juices running clear.
Substitutions
- Replace sour cream with greek yogurt for a lighter, tangier dip.
- Replace blue cheese with cheddar cheese for a milder dip.
Storage
- Refrigerate up to 3 days
- Store wings and dip separately in airtight containers. Reheat wings on a baking tray at 200°C (390°F) for 10–15 minutes until piping hot; toss with a fresh splash of buffalo wing sauce if needed. Freeze cooked wings (unsauced if possible) for up to 2 months; defrost overnight in the fridge before reheating.
