Lamb Scottadito with Salsa Verde
Why this recipe works
- Fast, high-heat cooking: Thin lamb cutlets cook in minutes, making this a quick dinner with plenty of grilled flavour.
- Bright balance: Lemon juice and capers cut through the richness of the lamb and keep the dish lively.
- Herbs and savoury depth: Rosemary, garlic, parsley, anchovies and mustard build a bold but balanced salsa verde.

Timing notes
- Serve straight away: Scottadito is best eaten hot from the grill, while the lamb is juicy and the edges are still charred.
- Rest briefly: A short rest while you finish the salsa verde helps the juices settle without letting the lamb cool too much.
Authenticity notes
- Italian grill style: Scottadito is traditionally cooked quickly over strong heat, giving small lamb cutlets a deeply browned exterior.
- Sharp herb sauce: A punchy salsa verde is a natural match for grilled lamb, adding freshness, saltiness and acidity.
Ingredient notes
- Choose suitable cutlets: Bone-in lamb cutlets work best because they cook quickly and the bone helps keep the meat flavourful.
- Use good olive oil: Extra virgin olive oil matters here because it forms the base of both the lamb coating and the salsa verde.
- Anchovies add seasoning: Anchovies do not make the sauce taste fishy; they add savoury depth and salt, so taste before adding extra seasoning.
Common mistakes
- Not heating the grill enough: A properly hot grill is essential for colour; if it is too cool, the lamb can overcook before it chars.
- Leaving the cutlets too long: Lamb cutlets are thin, so adjust the time to their thickness and remove them while they are still juicy.
- Making the salsa too heavy: Keep the salsa verde loose enough to spoon over the lamb, adding a little extra olive oil if needed.

Instructions
- Heat a grill to high. Finely zest the lemon, then cut it in half and squeeze the juice into a mixing bowl.
- Finely chop the garlic and strip and finely chop the rosemary leaves. In a bowl, mix half the olive oil with the lemon zest, half the lemon juice, the garlic, rosemary and black pepper, then coat the lamb chops well.
- Grill the lamb chops for 2 to 3 minutes per side, until nicely charred and still juicy, adjusting the time for thickness. Transfer to a plate to rest while you make the salsa verde.
- Finely chop the parsley, capers and anchovy fillets, then stir them together with the remaining olive oil, remaining lemon juice and the Dijon mustard. Taste and adjust with more lemon juice if you want it sharper.
- Serve the lamb hot, spooning the salsa verde over the top. Any extra sauce is excellent alongside for dipping.

Tips
- For the best char, make sure the grill is properly hot before the lamb goes on, and avoid moving the chops too soon so they can colour.
- If you prefer a looser salsa verde, stir in an extra tablespoon of extra virgin olive oil just before serving.
Substitutions
- Replace fresh rosemary with fresh thyme for a softer, more floral herb note.
- Replace Dijon mustard with whole-grain mustard for a coarser texture in the salsa verde.
Storage
- Refrigerate up to 2 days
- Store the lamb and salsa verde separately in airtight containers. Reheat the lamb in a 180°C (355°F) oven for 8 to 10 minutes until piping hot; bring the salsa verde to room temperature and spoon over just before serving.
