Air Fryer Garlic Butter Chicken Wings
Why this recipe works
- Crisp skin without deep-frying: The air fryer circulates high heat around the wings, helping the skin turn golden and crisp with very little added fat.
- Rich but balanced: Garlic butter brings savoury depth, while lemon zest and juice cut through the richness for a cleaner finish.
- Simple finishing method: The sauce is made separately and tossed through at the end, so the garlic stays fragrant and the wings keep their texture.

Texture tips
- For crisper wings: Pat the wings very dry before seasoning; surface moisture slows browning and can make the skin steam.
- Do not stack the basket: Keep the wings in a single layer so hot air can circulate around them. Cook in batches if needed.
- Serve straight after tossing: The garlic butter is best added just before serving, while the wings are still hot and crisp.
Ingredient notes
- Use finely grated garlic: Finely grated garlic disperses evenly through the butter and gives a smoother coating than roughly chopped pieces.
- Adjust the lemon at the end: Taste after tossing and add more lemon juice only if you want a sharper, brighter finish.
- Fresh herbs work best: Fresh parsley adds colour and a clean herbal note; dried herbs will not give the same bright finish.
Common mistakes
- Avoid browning the garlic: Cook the garlic gently in the butter over low heat, then take it off the heat before adding the lemon.
- Check the meat near the bone: The wings should be piping hot throughout, with no pink at the bone.
- Do not sauce too early: Tossing the wings in butter before air-frying would soften the skin and increase the chance of scorching.
Make-ahead tips
- Prep the flavourings in advance: The garlic, lemon zest and parsley can be prepared ahead and kept covered in the fridge until needed.
- Best eaten freshly cooked: The wings have their best texture just after air-frying and tossing with the warm garlic butter.
- Reheat in the air fryer: Reheat chilled wings at 180°C (355°F) for 6 to 8 minutes until piping hot, then toss with any melted butter from the container.

Instructions
- Pat the chicken wings dry with kitchen paper, then season all over with the fine sea salt and black pepper. Preheat the air fryer to 200°C (390°F) for 3 minutes. Finely grate the garlic, zest the lemon and squeeze the juice.
- Arrange the wings in the air fryer basket in a single layer (cook in batches if needed). Air-fry for 22 to 26 minutes, turning halfway, until golden, crisp and cooked through. Transfer to a mixing bowl.
- While the wings cook, melt the butter in a small saucepan over low heat. Stir in the garlic and cook gently for 1 minute, then take off the heat and stir in the lemon zest and 2 tbsp lemon juice. Finely chop the fresh parsley.
- Pour the warm garlic butter over the wings and toss well to coat. Add the parsley and toss again, then taste and add a little more lemon juice if you like it sharper. Serve immediately.

Tips
- For maximum crispness, keep the wings in a single layer with space for air to circulate; cook in batches rather than stacking.
- If you are serving vulnerable groups, ensure the wings are cooked until piping hot throughout, with no pink at the bone.
Substitutions
- Replace fresh parsley with fresh basil for a different herbal finish.
- Replace lemon with lime for a brighter, more tropical citrus note.
Storage
- Refrigerate up to 3 days
- Cool, cover and refrigerate. Reheat in the air fryer at 180°C (355°F) for 6 to 8 minutes until piping hot; toss with any melted butter left in the container before serving.
