Ensalada de Navidad (Spanish Christmas Potato and Tuna Salad)

At Spanish Christmas meals, this chilled potato and tuna salad brings the familiar comfort of a creamy mayonnaise-bound salad with a more savoury, festive feel. Tender diced potatoes, carrots and peas form the base, while tuna, hard-boiled eggs and roasted red peppers add substance, colour and a gentle sweetness. The vegetables need to hold their shape, so careful draining and cooling are key to a clean, not watery, texture. Served well chilled, it works neatly as a light starter, part of a larger spread, or a make-ahead dish for relaxed entertaining.

Why this recipe works

  • Creamy but structured: Cooling the cooked vegetables before dressing helps the mayonnaise coat them cleanly without turning the salad heavy or loose.
  • Brightened richness: Lemon juice cuts through the mayonnaise and tuna, giving the salad a fresher, more balanced finish.
  • Built for chilling: A short rest in the fridge firms the salad and allows the tuna, egg, peppers and dressing to settle into a cohesive flavour.

Timing notes

  • Chill before serving: The salad needs time in the fridge so the mayonnaise firms slightly and the flavours come together.
  • Serve well chilled: Keep it cold until serving, especially for buffets or parties where mayonnaise-based salads should not sit out for long.

Texture tips

  • Cook the vegetables just until tender: Potatoes and carrots should hold their shape after draining; if overcooked, they can break down and make the salad pasty.
  • Let the vegetables steam-dry: Draining well and allowing excess moisture to evaporate keeps the dressing creamy rather than watery.

Make-ahead tips

  • Make it earlier in the day: The salad can be assembled ahead and kept covered in the fridge until needed.
  • Add the garnish last: Reserve the sliced egg and pepper strips for just before serving so the top looks neat and fresh.

Authenticity notes

  • Related to Spanish mayonnaise salads: This style sits close to ensaladilla rusa, with potatoes, vegetables, tuna, egg and mayonnaise forming the familiar base.
  • A flexible home-style dish: Spanish versions often vary by household, with roasted peppers, extra egg or a sharper vinegar note used to adjust the finish.

  1. Peel the potatoes and carrots, then cut them into small, even cubes. Put the eggs into a saucepan, cover with cold water, bring to the boil, then simmer for 10 minutes. Drain and cool the eggs under cold running water.
  2. Bring a large pot of well-salted water to the boil and cook the potatoes and carrots for 10 to 12 minutes until just tender but not falling apart. Add the peas for the final 2 minutes. Drain well in a colander and leave to steam-dry for 5 minutes.
  3. Tip the warm vegetables into a mixing bowl and leave to cool to room temperature. Meanwhile, peel and chop 3 of the eggs, reserving 1 egg for garnish. Drain the tuna and flake it into large pieces.
  4. Stir the mayonnaise with the juice of the lemon, the black pepper, and enough fine sea salt to taste. Fold the dressing through the cooled vegetables along with the tuna and the chopped eggs. Fold through most of the roasted red peppers, reserving a few strips for the top.
  5. Cover and chill for at least 30 minutes so the flavours meld and the salad firms up. Just before serving, slice the reserved egg and arrange it on top with the reserved roasted red peppers. Serve well chilled.

Recipe notes

Tips

  • For the best texture, drain the vegetables thoroughly and let them steam-dry before mixing with the mayonnaise.
  • If serving at a party, keep the salad chilled until the last moment and return leftovers to the fridge promptly.
  • Eggs should be fully cooked for anyone who is pregnant, elderly, very young, or immunocompromised.

Substitutions

  • Replace Mayonnaise with Avocado-oil mayonnaise for a slightly lighter flavour.
  • Replace Lemon with White-wine vinegar for a sharper, more traditional tang.

Storage

  • Refrigerate up to 2 days
  • Store in an airtight container in the fridge. Stir gently before serving again; if it loosens, add a small spoonful of mayonnaise and re-season with fine sea salt and black pepper.
