Air Fryer Chicken Karaage

Karaage is Japanese-style fried chicken, typically made with small pieces of thigh meat marinated in soy, ginger and garlic, then coated in potato starch for a crisp, delicate crust. This air fryer version keeps the familiar savoury, aromatic flavour and golden exterior while using circulating heat rather than deep frying. The result is best served straight away, when the coating is crisp and the chicken is juicy, with lemon wedges to add brightness. It works well as an appetiser, snack or part of a larger Japanese-inspired meal.

Why this recipe works

  • Crisp coating: Potato starch creates the light, dry crust that makes karaage recognisably crisp.
  • Savoury marinade: Soy sauce, ginger, garlic and toasted sesame oil season the chicken deeply before cooking.
  • Faster than deep-frying: The air fryer gives the chicken a golden finish with less oil and a simpler clean-up.

Authenticity notes

  • Air fryer adaptation: Traditional karaage is usually deep-fried; this version keeps the soy-ginger marinade and starch coating but uses circulating hot air for a lighter, more convenient finish.
  • Serve with lemon: A squeeze of lemon is a classic contrast to the savoury chicken and helps cut through the richness.

Ingredient notes

  • Use chicken thighs: Boneless, skinless thighs stay juicier than breast meat and are well suited to the short, high-heat cooking time.
  • Potato starch matters: Potato starch gives a slightly more shattery crust than cornflour, though cornflour still works as a lighter alternative.

Texture tips

  • Keep space between pieces: Arrange the chicken in a single layer so the hot air can circulate around the coating.
  • Let excess marinade drip off: Too much wet marinade on the surface can make the starch coating heavy rather than crisp.

Make-ahead tips

  • Marinate in advance: The chicken can be mixed with the marinade ahead of time and kept chilled, then coated just before cooking.
  • Refresh leftovers: Reheat refrigerated leftovers in the air fryer at 190°C (375°F) until piping hot and crisp again.

  1. Cut the chicken thighs into bite-sized pieces, about 3 to 4 cm. Finely grate the ginger and crush the garlic.
  2. In a mixing bowl, stir together the soy sauce, grated ginger, garlic and sesame oil. Add the chicken and toss well, then leave to marinate for 20 minutes at room temperature.
  3. Preheat the air fryer to 200°C (390°F) for 3 minutes. Tip the potato starch onto a plate or shallow bowl.
  4. Lift the chicken out of the marinade, letting excess drip off, then coat each piece in potato starch. Arrange in a single layer in the air fryer basket, leaving a little space between pieces.
  5. Air fry for 12 to 14 minutes, turning halfway, until deep golden and cooked through. If needed, cook for 2 minutes more until the coating feels crisp and the thickest pieces are no longer pink in the centre.
  6. Cut the lemon into wedges. Serve the karaage straight away with lemon wedges for squeezing over the top.

Recipe notes

Tips

  • For the crispest finish, keep the chicken in a single layer and cook in batches rather than crowding the basket.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, ensure the chicken is cooked until piping hot throughout with no pink remaining.

Substitutions

  • Replace Potato starch with Cornflour for a slightly lighter, less shattery crust.
  • Replace Sesame oil with Vegetable oil if you prefer a more neutral finish.

Storage

  • Refrigerate up to 2 days
  • Cool leftovers quickly and refrigerate in a sealed container. Reheat in the air fryer at 190°C (375°F) for 4 to 6 minutes until piping hot and crisp.
