Nem Ran Hanoi (Vietnamese Fried Spring Rolls)
Why this recipe works
- Crisp rice paper shell: Briefly softened rice paper tightens and crisps in hot oil, giving the rolls their distinctive brittle crunch.
- Savoury, aromatic filling: Pork, prawns, fish sauce, garlic and shallot build a deeply savoury centre without needing a long marinating time.
- Contrasting textures: Glass noodles, wood ear mushrooms and grated carrot add bite and lightness to the juicy meat and prawn filling.

Authenticity notes
- Northern Vietnamese style: Nem rán is the northern Vietnamese name for these fried rolls; in other parts of Vietnam, similar rolls are often known as chả giò.
- Serve with greens: Lettuce leaves are used for wrapping the hot rolls, adding freshness and a cool contrast to the fried shell.
Texture tips
- Avoid soggy wrappers: Dip each rice paper sheet only until flexible; it will continue to soften as you add the filling and roll.
- Keep the oil steady: Frying at 170°C (340°F) helps the rolls crisp evenly without absorbing too much oil.
Common mistakes
- Do not crowd the pan: Fry in batches so the rolls have room to turn and the oil temperature does not drop sharply.
- Check the filling is cooked: The pork should be cooked through and the prawns opaque before serving, especially because the rolls brown quickly.
Make-ahead tips
- Freeze cooked rolls: Cool the fried rolls completely, freeze them in a single layer, then bag once firm.
- Reheat until crisp: Reheat refrigerated rolls at 200°C (390°F) until piping hot and crisp; frozen rolls can be reheated from frozen at the same temperature.

Ingredients
Instructions
- Soak the glass noodles in hot water for 8 minutes until pliable, then drain well. Soak the wood ear mushrooms in hot water for 10 minutes until fully rehydrated, then drain and squeeze out excess water. Cut the noodles into shorter lengths and finely slice the mushrooms.
- Peel the prawns if needed, then chop them into small pieces. Finely chop the shallots and garlic, and grate the carrot. Put everything into a mixing bowl with the minced pork.
- Add 1 tbsp fish sauce and the black pepper to the bowl, then mix until the filling looks evenly combined and slightly tacky. Cover and set aside while you prepare the wrapping area. Keep the remaining fish sauce for serving.
- Fill a wide bowl with warm water and briefly dip one rice paper wrap until just flexible. Lay it flat and place a small log of filling near the bottom edge, then roll up tightly, folding in the sides as you go. Repeat with the remaining wraps and filling, keeping the finished rolls covered with a barely damp cloth so they do not dry out.
- Heat the vegetable oil in a wok or large frying pan to 170°C (340°F). Fry the rolls in batches for 6 to 8 minutes, turning, until deep golden and crisp and the pork is cooked through. Lift out with tongs and drain briefly before serving.
- Separate the iceberg lettuce into leaves and arrange on a platter. Serve the hot rolls with the lettuce for wrapping and the remaining fish sauce for dipping. Eat straight away while the rolls are at their crispest.
Recipe notes
Tips
- Do not over-soak the rice paper: a quick dip is enough, as it softens further as you roll.
- Keep the oil temperature steady; if it drops too low the rolls will absorb oil and soften.
- Food safety: make sure the pork is cooked through and the prawns are opaque all the way through before serving.
Substitutions
- Replace shallot with white onion for a slightly stronger, sweeter base.
- Replace vegetable oil with sunflower oil for frying.
- Replace black pepper with white pepper for a more traditional, gentler heat.
Storage
- Refrigerate up to 2 days
- Cool the cooked rolls completely, then refrigerate in a sealed container. Reheat on a baking tray at 200°C (390°F) for 10 to 12 minutes until piping hot and crisp. For freezing, freeze in a single layer, then bag; reheat from frozen at 200°C (390°F) for 15 to 18 minutes.
