Hummus Platter with Spiced Olive Oil, Pitta and Vegetables
Why this recipe works
- Creamy, glossy texture: Blending chickpeas with tahini, olive oil and water creates a smooth, scoopable hummus with enough body for a platter.
- Bright but savoury: Lemon juice and zest lift the richness of the tahini, while garlic and cumin keep the flavour rounded and savoury.
- Fast to assemble: Canned chickpeas, raw vegetables and toasted pitta keep the recipe practical for last-minute entertaining or everyday snacking.

Texture tips
- For smoother hummus: Blend longer than you think you need to, scraping down the bowl so the tahini and chickpeas fully combine.
- Loosen gradually: Add extra water a little at a time until the hummus looks glossy and soft enough to swirl.
Ingredient notes
- Use good tahini: A smooth, pourable tahini gives the hummus a cleaner flavour and creamier finish than a dry or overly bitter one.
- Treat the cumin gently: Warm the cumin only until fragrant; browning it can make the spiced oil taste harsh.
- Adjust the lemon at the end: Taste after blending and add more lemon if the hummus needs a brighter finish.
Make-ahead tips
- Make the hummus ahead: The hummus can be blended in advance and chilled in an airtight container, then loosened with a splash of water before serving.
- Keep the platter fresh: Store the vegetables, olives, pitta and hummus separately, then assemble just before serving so the pitta stays crisp.
- Best assembled fresh: The finished platter is at its best soon after assembling, especially once the warm spiced oil has been added.

Hummus
Spiced oil and platter
Instructions
- Drain and rinse the chickpeas. Zest the lemon, then juice it; set both aside.
- In a food processor, blend the chickpeas, tahini, garlic, lemon juice, 3 tbsp olive oil, water and salt until very smooth. Scrape down the bowl once or twice, then blend again until creamy; add a splash more water if needed for a softer texture.
- Warm 2 tbsp olive oil in a small saucepan over a low heat, then stir in the cumin and black pepper (if using). Cook for 30 to 60 seconds until fragrant, then take off the heat so it stays warm but does not brown.
- Toast the pita bread until warm and lightly crisp, then cut into wedges. Slice the cucumber into batons and halve the cherry tomatoes.
- Spoon the hummus onto a platter and swirl the top with the back of a spoon. Drizzle over the warm spiced oil, then finish with the lemon zest and scatter over the parsley; add the olives, cucumber and tomatoes alongside and serve with the toasted pita.
Recipe notes
Tips
- For extra-smooth hummus, blend for a full minute at the end and loosen with a little more water until it looks glossy.
- Keep the spiced oil on a low heat and remove it as soon as it smells fragrant; cumin turns bitter if it browns.
- If serving to anyone vulnerable, use pasteurised canned chickpeas and ensure the garlic is fresh and the platter is not left at room temperature for longer than 2 hours.
Substitutions
- Replace ground cumin with smoked paprika for a smokier warm oil topping.
- Replace pita bread with naan bread for a softer, chewier scoop.
- Replace fresh parsley with fresh mint for a brighter, cooler finish.
Storage
- Refrigerate up to 3 days
- Store the hummus in an airtight container in the fridge for up to 3 days. Freeze hummus only (not the vegetables or pita) for up to 2 months; defrost overnight in the fridge, then stir well and loosen with a splash of water if needed.
