Saumon à l’Oseille (Salmon with Creamy Sorrel Sauce)
Why this recipe works
- Bright but rich: Sorrel and lemon cut through the double cream, keeping the sauce fresh rather than heavy.
- Built-in depth: Reducing white wine with shallot concentrates the base of the sauce before the cream is added.
- Fast cooking: The sauce and salmon cook in parallel, making this a polished dinner in under 30 minutes.

Ingredient notes
- Use fresh sorrel if possible: Fresh sorrel gives the sauce its distinctive sharp, grassy flavour and wilts quickly into the cream.
- Balance the lemon carefully: Sorrel varies in tartness, so add lemon gradually and stop when the sauce tastes bright but rounded.
Texture tips
- Keep the cream gentle: Once the double cream is added, use a low simmer rather than a hard boil to help the sauce stay smooth.
- Cook the salmon just through: Remove the salmon when it is just opaque and flakes easily, as residual heat will continue to firm it slightly.
Serving ideas
- Serve with simple sides: Steamed potatoes and green beans work well because they absorb the sauce without competing with its acidity.
- Pair with a crisp white: A dry white wine with good acidity suits the creamy sorrel sauce and the richness of the salmon.
Timing notes
- Best served immediately: The sauce is at its smoothest and the salmon at its most delicate when plated as soon as both are ready.

Ingredients
Instructions
- Finely chop the shallot. Roughly chop the sorrel, then zest the lemon and squeeze a little juice.
- In a small saucepan, melt half the butter over a medium heat. Add the shallot with a pinch of the salt and cook for 2 to 3 minutes until softened but not coloured.
- Pour in the white wine and simmer briskly until reduced by about two thirds and syrupy. This should take 5 to 7 minutes; keep an eye on it so it does not catch.
- Lower the heat and whisk in the double cream; simmer gently for 2 to 3 minutes until lightly thickened. Stir in the sorrel and cook for 30 to 60 seconds until just wilted, then add a squeeze of lemon juice and a little zest to taste.
- While the sauce simmers, heat a large frying pan over a medium heat and melt the remaining butter. Season the salmon with the remaining salt, then cook for 3 to 4 minutes on the first side and 2 to 4 minutes on the other, until just opaque and it flakes easily.
- Taste the sauce and adjust with a touch more lemon juice if you want it brighter. Spoon the sorrel sauce onto plates and set the salmon on top, serving straight away.

Serving suggestions
This recipe pairs well with:
Tips
- Keep the sauce at a gentle simmer after adding the double cream; a hard boil can split it.
- Sorrel varies in sharpness, so add the lemon juice gradually and stop when the sauce tastes bright but balanced.
- If serving anyone vulnerable, cook the salmon until piping hot throughout and the thickest part flakes easily.
Substitutions
- Replace White wine with Dry white wine for a cleaner, more classic reduction.
- Replace Lemon with a smaller amount of Lemon for a softer tang if your sorrel is very sharp.
Storage
- Refrigerate up to 1 days
- Best eaten straight away. If you have leftovers, cool quickly and refrigerate; reheat the salmon gently in a covered frying pan over a low heat until piping hot, and warm the sauce very gently in a saucepan without boiling.
