Wielkanocna Pieczeń (Polish Easter Roast Loaf with Eggs)

In Polish Easter cooking, wielkanocna pieczeń brings together the comfort of a seasoned meatloaf with the visual signature of whole hard-boiled eggs running through the centre. Made with minced pork and beef, softened onion, garlic, breadcrumbs and marjoram, it bakes into a firm, sliceable roast with a savoury, gently herby flavour. The egg-filled cross-section makes it especially suited to a festive table, but the loaf is practical too: it can be served warm for dinner or chilled and cut neatly for cold platters, usually with mustard alongside.

Why this recipe works

  • Distinctive centrepiece: Hard-boiled eggs baked through the centre give each slice the recognisable Easter cross-section.
  • Savoury, herby flavour: Softened onion, garlic, marjoram and mustard season the pork and beef mixture without overwhelming it.
  • Good warm or cold: The loaf firms as it rests, making it easy to slice neatly for serving straight away or later.

Timing notes

  • Rest before slicing: Let the loaf rest in the tin so the juices settle and the structure firms before turning it out.
  • For the neatest slices: Chilling the baked loaf before cutting gives cleaner slices, especially if serving it cold.

Texture tips

  • Hydrate the breadcrumbs: Letting the milk soak into the breadcrumbs helps keep the meatloaf tender rather than dense.
  • Mix until sticky: A well-combined mixture holds together better around the eggs and slices more cleanly.

Make-ahead tips

  • Prepare in advance: Bake the loaf ahead, cool it completely, then refrigerate well covered until ready to serve.
  • Reheat gently: Warm slices in a 180°C (355°F) oven until piping hot to keep the texture firm.
  • Freezes well: Freeze the cooked loaf whole or in slices, then defrost overnight in the fridge before reheating or serving cold.

Authenticity notes

  • Easter table dish: The eggs through the centre make this style of Polish roast loaf especially associated with Easter serving.
  • All-pork version: Using only minced pork is a common variation and gives the loaf a slightly softer texture.

  1. Put 4 of the eggs in a saucepan, cover with cold water, and bring to the boil. Simmer for 9 minutes, then drain and cool under cold running water; peel once cool enough to handle.
  2. Heat the oven to 180°C (355°F). Melt the unsalted butter, then cook the yellow onion with a pinch of the fine sea salt over medium heat until soft and translucent; add the garlic for the last 1 minute, then cool slightly.
  3. In a mixing bowl, stir the whole milk into the breadcrumbs and leave for 5 minutes to hydrate. Add the minced pork, minced beef, dried marjoram, remaining fine sea salt, black pepper, Dijon mustard, the cooled onion mixture, and 2 eggs, then mix until very well combined and slightly sticky.
  4. Pack half the meat mixture into a buttered loaf tin, pressing it firmly into the corners. Nestle the hard-boiled eggs in a line down the centre, then cover with the remaining meat mixture and seal well so the eggs are fully enclosed.
  5. Bake for 55 to 65 minutes until firm and browned, and the centre is piping hot. Rest in the tin for 10 minutes, then turn out and slice thickly to show the eggs; serve warm or cold with extra Dijon mustard on the side.

Recipe notes

Tips

  • For neat slices, chill the baked loaf for 1 to 2 hours before cutting, then bring to room temperature or reheat gently to serve.
  • If serving warm, reheat slices in a 180°C (355°F) oven for 10 to 12 minutes until piping hot, rather than microwaving, to keep the texture firm.
  • Food safety: if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs with a recognised food safety mark and ensure the loaf is piping hot in the centre.

Substitutions

  • Replace Dijon mustard with yellow mustard for a milder, more traditional table-mustard flavour.
  • Replace whole milk with low-fat milk; the loaf will be slightly less rich but still tender.
  • Replace minced beef with minced pork for an all-pork version with a softer texture.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate well covered. Freeze whole or in slices; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot, or serve cold.
