Pasta con le Polpette Napoletane (Pasta with Neapolitan Meatballs)
Why this recipe works
- Gentle sauce cooking: Simmering the meatballs directly in the tomato sauce keeps them tender while adding savoury depth to the passata.
- Simple, rounded flavour: Parmesan, parsley, garlic and beef build flavour without needing a long, complex sauce.
- Easy to serve: Rigatoni catches the sauce well, but the meatballs and tomato base can also be paired with long pasta if preferred.

Authenticity notes
- Neapolitan-style meatballs: The small polpette are simmered in tomato sauce, which is then used to dress the pasta.
- Pasta choice: Rigatoni gives a hearty, sauce-catching finish, while spaghetti offers a more traditional long-pasta alternative.
- Cheese choice: Parmesan adds savoury depth; Pecorino Romano can be used for a sharper, saltier result.
Common mistakes
- Overworking the meat: Mix the beef only until the ingredients are combined; compacting the mixture can make the meatballs dense.
- Boiling the sauce too hard: Keep the sauce at a bare simmer so the meatballs cook gently and hold their shape.
- Cooking the pasta too early: Boil the rigatoni while the meatballs finish simmering so it can be tossed with the sauce straight away.
Make-ahead tips
- Cook the sauce ahead: The meatballs and sauce can be made in advance and refrigerated in a sealed container for up to 3 days.
- Freeze without the pasta: Freeze the meatballs and sauce together, then cook fresh rigatoni when ready to serve.
- Reheat gently: Warm the sauce and meatballs slowly with a splash of water until piping hot before tossing with freshly cooked pasta.

Instructions
- Finely chop the fresh parsley and finely grate the parmesan. In a mixing bowl, combine the parsley, most of the parmesan (reserve a small handful for serving), the breadcrumbs, egg, 1 tsp of the fine sea salt, and the black pepper.
- Add the minced beef and mix gently until just combined. Roll into small meatballs, about the size of a large marble, so they cook through quickly and stay tender.
- Warm the extra virgin olive oil in a large frying pan over medium heat. Add the garlic and cook for 30 to 60 seconds until fragrant, without letting it colour.
- Pour in the tomato passata and bring to a gentle simmer. Season with the remaining 1 tsp fine sea salt, then lower the heat so the sauce barely bubbles.
- Nestle the meatballs into the sauce in a single layer, then cover and simmer gently for 20 to 25 minutes until the meatballs are cooked through and tender. Give the pan an occasional shake to prevent sticking, rather than stirring vigorously.
- Meanwhile, bring a large pot of well-salted water to the boil. Cook the rigatoni until al dente, then drain, reserving a small splash of the cooking water.
- Add the drained rigatoni to the sauce and toss gently to coat, adding a little reserved pasta water if needed to loosen. Serve straight away with the reserved parmesan sprinkled over the top.

Tips

- Replace Parmesan with Pecorino Romano cheese for a sharper, saltier flavour.
Storage
