Festive Vegetable Pulao (Spiced Basmati Rice with Saffron)
Why this recipe works
- Layered aroma: Whole spices bloom in ghee before the rice is added, giving the pulao a fragrant base without making it heavy.
- Separate grains: Rinsing and soaking the basmati helps remove excess starch, so the cooked rice stays long, light and distinct.
- Flexible serving: The gentle spice and vegetable base make it suitable with richer curries, simple dals, yoghurt or chutneys.

Ingredient notes
- Choose basmati rice: Long-grain basmati is important here because it cooks up fragrant and separate rather than soft and sticky.
- Bloom the saffron: Soaking the saffron before adding it to the pot helps release its colour and delicate aroma more evenly through the rice.
- Cut vegetables evenly: Small, even pieces of carrot and green beans cook at the same pace and mix neatly through the rice.
Timing notes
- Use the soaking time well: While the rice soaks, slice the onion, prepare the vegetables and bloom the saffron to keep the cooking flow efficient.
- Do not skip the covered rest: Leaving the pot covered off the heat allows the rice to finish steaming and firm up before fluffing.
Texture tips
- Keep the heat very low: Once covered, the rice should steam gently. Too much heat can make the base catch and the grains cook unevenly.
- Drain the rice well: Excess soaking water can throw off the final texture, so drain thoroughly before adding the rice to the pot.
- Fluff gently: Lift the rice from the edges with a spoon rather than stirring hard, which can break the grains.
Make-ahead tips
- Prepare the vegetables ahead: The onion, carrot and green beans can be cut in advance and kept chilled until you are ready to cook.
- Reheat with a little moisture: Warm leftovers covered with a splash of water so the rice steams back to a soft, hot texture.
- Freeze cooked portions: Cool the pulao quickly, freeze in sealed portions and defrost in the fridge before reheating until piping hot.

Ingredients
Instructions
- Rinse the basmati rice in several changes of cold water until the water runs mostly clear, then soak it in fresh water for 20 minutes. Meanwhile, put the saffron in 2 tbsp of the measured water in a small bowl to bloom.
- Thinly slice the onion. Peel the carrot, then cut the carrot and green beans into small, even pieces so they cook at the same rate.
- Heat the ghee in a large pot over medium heat. Add the onion and cook, stirring often, for 10 to 12 minutes until deep golden and sweet-smelling.
- Stir in the cumin seeds, cardamom pods, cloves, cinnamon stick and bay leaves. Cook for 30 to 60 seconds until the spices smell fragrant.
- Add the carrot and green beans and cook for 3 to 4 minutes, stirring to coat in the spiced ghee. Tip in the frozen peas and cook for 1 minute to take the chill off.
- Drain the rice well, then add it to the pot and stir gently for 1 to 2 minutes so the grains are glossy and lightly toasted. Stir in the fine sea salt.
- Pour in the remaining water, then add the saffron water (including the threads). Bring to the boil, then cover, reduce to the lowest heat and cook for 12 minutes until the rice is tender and the water is absorbed.
- Remove from the heat and leave, covered, for 8 minutes to steam and finish cooking. Fluff gently with a spoon, lifting from the edges so the grains stay separate, and serve warm.
Recipe notes
Tips
- For the best texture, keep the heat very low once covered so the rice steams rather than boils.
- If serving to young children, pick out the whole spices (cloves, cardamom pods, bay leaves and cinnamon) before serving.
- If you are pregnant, elderly, or immunocompromised, ensure the rice is served piping hot and cooled quickly before refrigerating leftovers.
Substitutions
- Replace ghee with unsalted butter for a similar richness.
- Replace frozen peas with green peas for a fresher, sweeter finish.
- Replace yellow onion with red onion for a slightly sharper flavour.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a saucepan with a splash of water over low heat, covered, until piping hot, or microwave covered, stirring once halfway through; freeze for up to 2 months and defrost overnight in the fridge before reheating.
