Lamb Biryani with Caramelised Onions and Saffron
Why this recipe works
- Layered flavour: Whole spices, garam masala, caramelised onions and saffron build depth through each stage rather than relying on one seasoning mix.
- Classic layering method: Part-cooked rice is layered over tender lamb so it finishes steaming gently while absorbing the spiced gravy below.
- Rich and satisfying: Ghee, yoghurt and slow-simmered lamb create a generous, aromatic dish with soft meat and separate, fragrant grains of rice.

Timing notes
- Rest before serving: The final 10-minute rest helps the steam settle, making the rice easier to fluff without breaking the grains.
- Plan the stages: Most of the time is spent caramelising onions, simmering the lamb and steaming the layered biryani; the active work is spread across the recipe.
Texture tips
- Keep the rice fluffy: Drain the rice while the centre of each grain is still firm, as it finishes cooking during the covered steam.
- Lift rather than stir: Use a gentle lifting motion from the bottom when serving so the lamb is distributed without turning the rice mushy.
Ingredient notes
- Use basmati rice: Basmati is important here because its long grains stay separate and aromatic after soaking, boiling and steaming.
- Steep the saffron: Blooming saffron in hot water before layering helps release its colour and fragrance more evenly through the rice.
- Add yoghurt gradually: Stirring the yoghurt in spoonful by spoonful helps keep the sauce smooth and reduces the risk of splitting.
Make-ahead tips
- Cook the lamb ahead: The lamb mixture can be prepared in advance, then gently reheated before layering with freshly parboiled rice.
- Reheat gently: Add a splash of water and reheat covered over low heat, or warm in a 180°C (355°F) oven until piping hot throughout.
- Freezer-friendly: Cool quickly before freezing in sealed containers, then defrost thoroughly and reheat until hot all the way through.

Instructions
- Rinse the basmati rice in cold water until the water runs mostly clear, then cover with fresh water and soak for 20 minutes. Meanwhile, thinly slice the onions, finely grate the ginger, and crush the garlic to a paste with a pinch of the fine sea salt. Pick the coriander leaves and set aside.
- Warm 2 tbsp of the ghee in a large saucepan over medium heat and fry the onions with a pinch of salt, stirring often, for 18 to 22 minutes until deep golden and caramelised. Transfer half the onions to a bowl for layering later. Keep the remaining onions in the pan.
- Add the remaining ghee to the pan with the onions, then stir in the cinnamon stick, cardamom pods and cloves for 30 seconds until fragrant. Add the lamb, season with black pepper and 1 tsp of the fine sea salt, and cook for 6 to 8 minutes, turning, until lightly browned. Stir in the ginger, garlic, ground cumin and 1 tsp of the garam masala and cook for 1 minute.
- Lower the heat and stir in the yogurt a spoonful at a time so it does not split. Add 500 ml of the water, bring to a gentle simmer, cover and cook for 45 to 55 minutes until the lamb is tender. If it looks dry at any point, add a splash more water.
- While the lamb cooks, bring 1 litre of the water to the boil in a large pot and stir in 2 tsp of the fine sea salt. Drain the soaked rice and boil it for 5 to 6 minutes until the grains are just tender on the outside but still firm in the centre. Drain well in a colander.
- Put the saffron in a small bowl and stir in 2 tbsp hot water from the kettle, then leave to steep for 5 minutes. Check the lamb: you want a little thick gravy coating the meat, not a watery sauce, so simmer uncovered for a few minutes if needed. Stir in the remaining 1 tsp garam masala.
- To layer, spread half the parboiled rice over the lamb, then scatter over the reserved caramelised onions and half the coriander. Spoon over the remaining rice, drizzle with the saffron water, then cover tightly with a lid. Cook on the lowest heat for 20 minutes, then rest off the heat for 10 minutes.
- Gently fluff the biryani with a wooden spoon, lifting from the bottom to bring up the lamb without breaking the rice too much. Taste and add a final pinch of fine sea salt if needed. Serve topped with the remaining coriander.

Tips
- For the best texture, keep the rice slightly undercooked when you drain it; it finishes steaming during the final covered cook.
- If you are cooking for anyone who is pregnant, elderly, or immunocompromised, use pasteurised yogurt.
Substitutions
- Replace ghee with unsalted butter for a similar richness.
- Replace yogurt with crème fraîche for a slightly tangier, more stable sauce.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat in a covered saucepan with a splash of water over low heat, or in a 180°C (355°F) oven until piping hot throughout.
