Arroz de Marisco (Portuguese Seafood Rice)

Portugal’s arroz de marisco is a generous seafood rice, served loose and saucy rather than dry, with the grains absorbing a savoury base of tomato, onion, garlic, white wine and fish stock. Prawns, mussels and squid give the dish its briny depth, while bay leaves add gentle aroma and fresh coriander and lemon sharpen the finish. It is the kind of one-pot rice dish that feels relaxed but special: hearty enough for dinner, bright enough for warmer weather, and best served immediately while the seafood is tender and the rice is still silky.

Why this recipe works

  • A deeply savoury base: Slowly softened onion, garlic and tomato create a rich foundation before the wine and fish stock go in.
  • Loose, saucy texture: The rice is cooked in enough stock to stay spoonable, which is central to the character of arroz de marisco.
  • Fresh finish: Lemon and coriander cut through the seafood richness and lift the tomato-based broth.

Authenticity notes

  • Not a dry rice dish: Arroz de marisco should be loose and brothy rather than dry, with the rice carrying the flavour of the seafood stock.
  • Flexible seafood mix: Prawns, mussels and squid are classic choices, but the exact combination often varies depending on what is fresh and available.

Timing notes

  • Serve promptly: The rice continues absorbing liquid as it sits, so this dish is best served as soon as it reaches a loose, saucy consistency.
  • Prep the seafood first: Have the mussels cleaned, squid sliced and prawns ready before the rice goes in, as the final stage moves quickly.

Ingredient notes

  • Check the mussels carefully: Discard cracked mussels before cooking, and discard any that remain closed after cooking.
  • Use hot stock: Adding hot fish stock helps the rice cook evenly and keeps the simmer steady.

Common mistakes

  • Boiling too hard: Keep the pot at a gentle simmer once the rice is added; aggressive boiling can split the grains and toughen the seafood.
  • Adding seafood too early: Prawns and mussels only need the final few minutes, so add them late and stop once the prawns are opaque and the mussels have opened.

  1. Prepare the seafood: rinse the mussels and discard any that are cracked or do not close when tapped. Slice the squid into rings and, if needed, peel and devein the prawns. Finely chop the onion and garlic, dice the tomatoes, and roughly chop the coriander.
  2. Heat the olive oil in a large pot over medium heat. Add the onion and cook for 6 to 8 minutes until soft and translucent, then stir in the garlic for 1 minute until fragrant. Add the tomatoes and bay leaves and cook for 8 to 10 minutes, stirring, until the tomatoes break down into a thick, jammy base.
  3. Pour in the white wine and simmer for 2 to 3 minutes to cook off the alcohol. Add the hot fish stock and bring to a gentle boil. Stir in the rice and simmer for 12 minutes, stirring occasionally so the rice does not catch.
  4. Stir in the squid and simmer for 3 minutes. Add the prawns and mussels, cover, and cook for 5 to 7 minutes until the mussels open and the prawns are just opaque. Discard any mussels that remain closed.
  5. Cook for a further 2 to 4 minutes, uncovered, until the rice is tender and the dish is loose and saucy, adding a splash more stock if it tightens too much. Take off the heat and stir through most of the coriander. Squeeze in lemon juice to taste and serve with the remaining coriander scattered over the top.

Recipe notes

Tips

  • Keep the heat at a gentle simmer once the rice goes in; a hard boil can make the grains split and the seafood tough.
  • For the best texture, add the prawns and mussels right at the end and stop cooking as soon as the prawns turn opaque and the mussels open.
  • Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, make sure the prawns are fully opaque and the mussels are piping hot, and discard any mussels that do not open.

Substitutions

  • Replace Dry White Wine with a little extra Fish stock plus a squeeze of Lemon for a non-alcoholic version.
  • Replace Fresh coriander with Fresh parsley if you prefer a milder herb finish.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, then refrigerate in an airtight container. Reheat gently in a saucepan with a splash of fish stock until piping hot, stirring often; avoid boiling hard to keep the seafood tender.
