Truffle Mushroom Risotto
Why this recipe works
- Naturally creamy finish: Arborio rice releases starch as the hot stock is added gradually, creating a creamy texture without needing cream.
- Deep savoury base: Browning the mushrooms first concentrates their flavour before the shallot, garlic, wine and stock build the risotto’s savoury depth.
- Balanced richness: Dry white wine cuts through the butter and Parmesan, keeping the finished risotto rich but not heavy.

Timing notes
- Serve immediately: Risotto continues to thicken as it sits, so serve it while it is still loose, glossy and spoonable.
- Prepare before you start: Slice the mushrooms, chop the aromatics and grate the Parmesan before cooking; once the rice goes in, the process needs regular attention.
Texture tips
- Finish off the heat: Stirring in the butter and Parmesan away from direct heat helps the risotto turn glossy rather than oily.
- Keep it flowing: If the risotto tightens before serving, loosen it with a little hot stock until it settles softly in the bowl.
- Keep a slight bite: Stop cooking when the rice is tender but still has a gentle firmness at the centre; it will continue softening briefly off the heat.
Ingredient notes
- Use risotto rice: Arborio rice is important here because its starch helps create the characteristic creamy consistency.
- Add truffle oil with restraint: Truffle oil is aromatic and can dominate quickly, so it works best as a finishing drizzle rather than a cooking fat.
- Brown the mushrooms properly: Let the mushrooms cook until their moisture has evaporated and they take on colour; this gives the risotto a deeper savoury flavour.
Ingredient swaps
- Without wine: Replace the dry white wine with vegetable stock for an alcohol-free version, adding a small splash of acidity at the end if you want more brightness.
- Change the mushrooms: Cremini mushrooms can be replaced with a mix of everyday mushrooms for a milder result, or more intensely flavoured varieties for extra depth.

Instructions
- Pour the vegetable stock into a saucepan and bring it to a gentle simmer, then keep it hot over a low heat. Grate the Parmesan and set it aside.
- Finely chop the shallots and garlic. Slice the mushrooms.
- Heat the extra virgin olive oil in a large pot over a medium-high heat. Add the mushrooms and cook for 6 to 8 minutes until browned and their moisture has cooked off; season with a pinch of the salt and pepper, then tip onto a plate.
- Reduce the heat to medium and add half the unsalted butter to the pot. Add the shallots with the remaining salt and cook for 3 to 4 minutes until softened, then stir in the garlic for 30 seconds until fragrant.
- Stir in the arborio rice and cook for 1 to 2 minutes, stirring, until the grains look slightly translucent at the edges. Pour in the dry white wine and cook, stirring, until it has almost completely evaporated.
- Add a ladleful of hot stock and stir until it is mostly absorbed. Continue adding stock a ladle at a time, stirring often, for 18 to 22 minutes until the rice is tender with a slight bite and the risotto is loose and creamy; you may not need every last drop of stock.
- Stir the mushrooms back in and cook for 1 to 2 minutes to warm through. Take the pot off the heat and stir in the remaining butter, the Parmesan, and the black pepper until glossy; loosen with a splash of stock if needed.
- Divide between bowls and drizzle each portion with a little truffle oil. Serve straight away while the risotto is still flowing.
Recipe notes
Tips
- Keep the stock at a gentle simmer; adding cold stock slows cooking and can make the risotto gluey.
- Aim for a loose, spoonable texture at the end; if it tightens up, stir in a splash of hot stock just before serving.
- Truffle oil is potent, so start with a light drizzle and add more at the table if you like.
Substitutions
- Replace Dry White Wine with the same amount of Vegetable stock for an alcohol-free version.
- Replace Cremini mushrooms with Mushrooms for a milder flavour.
Storage
- Refrigerate up to 2 days
- Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of vegetable stock, stirring until piping hot and creamy again; add the truffle oil after reheating for the best aroma.
